Back to Basics: Our Weekly Meal Plan of Simple Dinners | Paleo Parents

Coming off of last week’s stomach flu and heading into spring break, this week’s meal plan was all about simple and nourishing dinners – i.e. our old standbys and family classics! We love, LOVE to try new recipes we haven’t had before, but sometimes a week filled with familiar foods that we know and love is refreshing too. All the recipes in this week’s meal plan would be perfect for someone without a lot of experience in the kitchen or someone who is short on time and wants simple, flavorful dinners!

Monday: Honey Mustard Chicken Thighs and Asparagus
—> Chicken Thighs recipe from Eat Like a Dinosaur with Tessemae’s Honey Mustard
—> Oven-Roasted Asparagus (tossed with avocado oil and salt, and baked until tender) similar to the one in Real Life Paleo

Honey mustard and chicken almost always go together in our house! It’s a very easy and delicious way to liven up a potentially boring dinner, and we always keep Tessemae’s on hand. Paired with simple roasted asparagus, this dinner took less than ten minutes to prep and had the boys licking their fingers!

Tuesday: Crab Balls and Citrus Broccoli
—> Crab Balls recipe from Real Life Paleo
—> Tartar Sauce recipe from Real Life Paleo, made with Chosen Foods Mayo
—> Citrus Broccoli from Real Life Paleo

We try to eat seafood a couple times a week, and Crab Balls are one of our favorite ways to accomplish this. Plus, our tartar sauce is incredible!! Our lemony, citrusy broccoli recipe went perfect with this main dish!

Wednesday: Meatloaf and Roasted Brussels Sprouts
—> Meatloaf recipe from Beyond Bacon
—> Brussels Sprouts recipe from Eat Like a Dinosaur

Did you know our boys have been known to fight over the last serving of brussels sprouts?! They’re that good! Paired with meatloaf, another household favorite, and this meal is always a total hit!

Thursday: St.Patrick’s Day Dinner of Corned Beef, Cabbage and Colcannon
—> Corned Beef Brisket with Cabbage recipe from The Domestic Man
—> Colcannon recipe from The Domestic Man

For classic cultural cuisine done Paleo, we almost always turn to the The Domestic Man. And his brisket, cabbage and Colcannon (mashed taters with onion and kale) did NOT disappoint this year!

Friday: Stir Fry Chicken and Japchae
—> Stir Fry Chicken recipe, was a new creation Matt just threw together based on the Asian recipes in Real Life Paleo
—> Japchae recipe from The Domestic Man

We were feeding a crowd at open gym this week, so Matt made an off-the-cuff stir fry with chicken and vegetables, paired with the Domestic Man’s crowd-pleasing sweet potato noodle, except we skipped the beef and made it a veggie dish, since one of our friends is currently not eating meat on Fridays.
