Hi Friends- here’s a look at our week!
Have we mentioned that we have the COOLEST KIDS EVER?! 65 pound boy lifting a 250 pound tire. And he did it like a dozen times! His brother was right there to cheer him on too. We’re so thrilled that they have been led by our example and want to be strong and healthy. And that they have fun doing it! See the video here!
Stacy also played with tires… but used them to pull a truck with the emergency break on, and then pushed it too. And that was AFTER a PR on her axel deadlift and log press! Amazing that eating right and training regularly produces results!
Naturally, with “McCarry” in the house, we had to give a nod to St. Patrick’s day. We made the Chicken Fingers recipe from Real Life Paleo, using fish instead (ah-ma-zing), and served it with traditional Irish Colecannon, recipe courtesy of The Ancestral Table. Cole coined the meal as TATERS AND KALE and gave it two thumbs up.
Stacy got WILD AND CRAZY this week with the addition of microgreens to her daily lunch salad! They are baby plants- and these ones are sunflower and basil. They are super crunchy and fresh, and an interesting way to jazz up a salad. This salad was also studded with sliced almonds and raisins, and topped with Wild Planet Tuna, and Sea Veg Salt. Chicken and waffles might have been the greatest match ever made… UNTIL PORK CAME ALONG. Slow roasted pork shoulder, on top of perfect crispy fluffy waffles, served with savory Brussels sprouts and bacon. Drizzled with real maple syrup. This is one of our favorite special meals, and we recommend you make it one of yours too! Matt breaks down how to achieve the perfect Chicken (or pork!) and Waffles —-> HERE!
When Stacy was feeling under the weather towards the end of the week, she requested one of her favorite COMFORT FOODS: muffins. Do bread-y cake-y things give you healing powers too? These muffins (from ELaD), made with only almonds, fruits and veggies go perfectly with kombucha, boat-loads of broth, and naps!

Before we went Paleo, Asian cuisine was one of our family’s favorites. And you know what- it still is! It took use years to nail down our favorite recipes and find health-promoting ingredient substitutions, but we’ve got it down!
We can’t talk about Asian food without mentioning our WORLD FAMOUS Mongolian Beef! The secret is in the sauce. We use molasses, fish sauce and coconut aminosto get that sticky sweet, savory umami taste you’ve been missing.
One of our other go-to’s is Japchae. Don’t be fooled by the name, this is a simple but flavorful dish with our all-time favorite noodles: sweet potato starch noodles! Plus, this dish is loaded with veggies too! We love Domestic Man’s Japchae recipe here.
