Meal Plan Monday October 4th

Hello October! We’re really embracing all of fall’s bounty in this week’s meal plan from apples, squash, and more. It’s quite a variety of meals this week in the plan from comfort classics to date night in. Are you finding yourself in a groove with meal planning in this season yet? I know it can be hard, but sticking to themes can really help. And don’t forget to get in those veggies wherever you can!

Meal Plan for the Week of October 4th, 2021

Total unique veggie count for this week’s meal plan, just for dinners: 30! Add a green smoothie, salad for lunch, or snack on some fruit to get you even more! We build our plans to have a variety of proteins and diversity of fruits & veggies. You’ll get even more variety in your breakfast and lunches, exceeding the goal for optimum gut health diversity of 30 servings per week.

 MONDAY

I love a creamy broth based soup. It’s definitely reminiscent of the canned versions. This soup is so packed full of veggies I have a feeling we’ll be eating it all week! Unique fruit & veggie varieties – 7: green cabbage, white onion, potatoes, carrots, celery, garlic, parsley Protein type: pork

TUESDAY

Taking Taco Tuesday to the coast with these delicious shrimp tacos. I could put that sauce on anything! Topped with some pickled red onions and avocado it’s simply, chef’s kiss!  Unique fruit & veggie varieties – 6: lime, orange, cilantro, purple cabbage, red onions, avocados Protein type: seafood

    WEDNESDAY

      Breaking out a few of our favorites from Beyond Bacon has been really fun. Meatloaf and mashers is such a staple, but our version is loaded with nutrients and veggies! Unique fruit & veggie varieties – 4: yellow onion, mushrooms, rosemary, thyme Protein type: beef and pork

      THURSDAY

      Apple season really needs to be celebrated before pumpkin season. This chicken embraces the savory side of apples and it compliments so well.  Unique fruit & veggie varieties – 1: red apples Protein type: poultry

      FRIDAY

        We’re having a date night in, well with the whole family. This dish truly does feel elegant without the price tag or having to get dressed up.  Unique fruit & veggie varieties – 3: scallions, broccoli, cauliflower Protein type: seafood

         SATURDAY

          We loved getting a great deal on chicken breasts with our latest Butcher Box delivery. And I knew just the recipe I wanted to make. Unique fruit & veggie varieties – 6: butternut squash, brussel sprouts, beets, parsnips, acorn squash, radish  Protein type: chicken

          SUNDAY

          Breakfast for dinner on a Sunday? Why not! I loved pairing a good hash with our waffles. Unique fruit & veggie varieties – 3: sweet potato, green apples, casssava Protein type: pork

          About our weekly menu

          You are not alone in your struggle to put healthy meals on the table without spending all day in the kitchen. Trying to get in a variety of fruits, veggies, and protein while using local, seasonal ingredients, not to mention a variety of proteins and healthy fats, while not spending all day in the kitchen. Work, virtual school, parenting, maintaining social relationship in a time of quarantine… life is hard enough without the additional stress of what to meal plan and cook. But that’s why we’re here!

          You can read about how we meal plan to do your own, or you can use each weekly post as your own menu or just for inspiration. Not every meal, every week will work for you and your family. But, I hope at least I can recommend some new, fun things and provide inspiration for your family to plan ahead in a way that works for you. We hope your whole family enjoys!
