How can summer be over? Here’s how we’re avoiding labor this weekend, plus some great recipes for packing a Paleo lunch box!
Ah! Who let it be the official last weekend of summer? This weekend we’re living it up vacationing at a lake house, our annual tradition for Labor Day for the last 3 or 4 years. And true to the spirit of the holiday, we’re relaxing, enjoying one another’s company, and living up the last days of summer as much as we can. We hope you had as fantastic as a summer as we did – it’s just been one awesome adventure after another, like this camping trip we took last weekend…
This pizza has nothing to do with our camping weekend, but it was too incredible not to share! This is from MOD, a local pizzeria serving up awesome gluten-free pizza- this one with bacon and brussels sprouts! Eating nutrient-rich foods every day allows us to enjoy special treats like these on occasion!
Every year on Cole’s birthday weekend we go camping (a full outline of the foods we always pack —> here!). Cider-braised brats and potatoes cooked on the coals did NOT DISAPPOINT!
We took a family hike down a steep rocky trail, where water gun fights and lazy lounging in the water ensued! It is so nice to reconnect with nature and each other – one of my favorite things about this weekend spent in the woods with no electronics!
And the weekend wouldn’t be complete without our favorite treat: Cookie Smore’s!! If we don’t make our own marshmallows, we buy this brand. Paired with homemade chocolate chip cookies and chocolate chips makes for the BEST SMORES EVER!

The Instant Pot is a cooking appliance we couldn’t live without. We even wrote atutorial and FAQ so there would be no apprehension in getting one (since we’ve heard that some of you are intimidated by this contraption).
