Guest Post, Healthful Pursuit: Coconut Lime Frosty Cups

Yo! Leanne here and I’m super stoked to be sharing this recipe with you today…. but first, let’s chat about dairy.

Coconut Lime Frosty Cups (51)-2

If you’re new to the paleo lifestyle, or you’re a seasoned veteran, you know that giving up the good stuff can be a challenge. Many of us grew up on it, know how to cook with it, have oodles and oodles of recipes that call for it…

It’s tough to give up.

What sorts of recipes will you find in the toolkit? Awesome recipes of course! Just like this paleo-ified “ice-cream” cup recipe that I’m sharing with you today. Who needs creamy ice cream when you have a coconut-packed creamy frozen treat?

Dairy, schmairy. These Coconut Lime Frosty Cups is where it’s at!

Coconut Lime Frosty Cups (73)-2

Coconut Lime Frosty Cups

Chilled coconut cups that have a cream consistency, just like ice cream… but WAY better for you 😉


2 cups shredded unsweetened coconut, divided
1 banana, mashed
1/4 cup melted coconut butter/coconut manna
1/4 cup lite coconut milk
Zest from 1 lime
Pinch sea salt



  1. Preheat your oven to 300F and spread 1 cup of the shredded coconut on a baking sheet. Toast in the oven for about 15 minutes, checking on the sheet every 5 minutes or so to avoid the batch from burning. When complete, set aside to cool.
  2. Add mashed banana, coconut butter, milk, zest and salt to a large bowl. Whisk to combine
  3. Add toasted coconut, then un-toasted. Stir until everything is coated.
  4. Press the mixture into 6 silicon baking tins. Press down firmly with the back of a spoon and place in the freezer overnight.
  5. Best served out of the freezer. Makes 6 individual frosty cups.

      Hey Paul! Creamed coconut works great as a replacement for coconut butter/coconut manna. So happy to hear you think the kids will like this one!

      It was the only thing I had in the pantry. I’m sure full-fat would work well, too!

    I absolutely LOVE the sound of these but wondering if there is anything else that you could use instead of banana? We avoid banana as the sugar content of bananas causes issues with our son. Many thanks! 😀

    I am allergic to bananas and I am doing the AIP with no fruits except for blueberries and cranberries. Any suggestions to replace the mashed banana with?

    Substituted the banana with blended blueberries and 30 drops stevia and the recipe rocked!

    Just puled these out of the freezer. They are ok, but not what I was expecting. I was thinking they’d be sweeter and limey-er (like key lime pie maybe) so I think next time I’ll use a riper banana for sweetness or also add some applesauce and/or stevia. I think I’d also add in some lime juice to make it really limey. But I realllyyy like lime. 😉 Also, I did not have any silicone baking cups so I used a mini muffin pan with cupcake liners and it worked just fine. It made 20 mini muffin sized treats. Thanks!

    These were really not tasty. I was disappointed that I used all those ingredients and ended up with something that was basically flavorless with yuck texture. I’m sorry, I rarely would comment on a recipe, but I am on AIP and wanted to have something special. This was not it and I hope other will read this and choose to make something else. Again, I’m sorry, I don’t want to be rude, just honest.

    • I’m sorry you did not have success with these. That’s very disappointing. Since we are unsure if the recipe author will see your criticism, I’d recommend emailing her directly so she can improve this recipe.

    I was disappointed too…these were just meh. I agree with others…adding some lime juice and using a very ripe banana might help add more flavor? Mine also don’t seem to have an ice cream texture?

    why should the coconut milk be “lite”? is there a specific reason because i thought u guys were pro-saturated fat.
