Our Real Life
We hope you had safe and tasty 4th of July – we certainly did! Matt cooked up his famous Smoked Beef Brisket and Molasses Horseradish Mustard Ribs, and we also made a broccoli salad that’s so good we’ll be blogging it soon, corn on the cobb (no, not paleo, but it’s was a holiday treat), and watermelon. Very summer, very yummy! We also made a crazy special dessert that’s a super secret – known only to those that follow along on SnapChat. I can’t WAIT to share that one with you all soon, too! #harrypotterrelated
Do you ever get a food-craving that you just can’t shake? For me this week it was breakfast sandwiches. We got the gluten-free bagels from Trader Joe’s and made some bacon, egg, and cheese breakfast sandos- totally hit the spot. No, it isn’t Paleo, but it is real life. This is how we make a Paleo lifestyle sustainable!
Just when I thought I couldn’t love Vital Proteins anymore… I’ve still been struggling on and off with my back injury, and in light of a new diagnosis (I will be sharing more about that soon) I’ve started taking Vital Proteins Cartilage Collagen. So I discovered something else new and life-changing this week: cold-brewed chocolate. Our Favorite Kitchen Gadgets for Summer Eats!
We love eating seasonal food- it’s fresh and fun! For us, summertime means lots of fresh veggies from the farmer’s market, homemade ice cream, and smoothies for lunch while the boys are home on summer vacation!
Here are a few of our MUST-HAVE summer appliances:
The Spiralizer: do you have one of these yet?! This is the gadget that will turn your fresh veggies into billowing piles of veggie-noodles! We mostly use ours for zucchini noodles, but you can spiralize carrots, parsnips, beets, sweet potatoes, apples… With all the fresh summer veggies that are out, we’ve been keeping this one right on the counter lately!
Ice Cream Maker: this is the one we use and love. It is a solid, well-built machine that is also easy to operate and easy to clean. Homemade ice cream seems intimidating, but it’s really not! No kidding, most of the ice cream recipes on our blog involve the following: 1. mix ingredients together, 2. pour into ice cream maker. That’s it! The boys love it, it’s fun, and we can make them a healthy, cool treat.
Blendtec Blender: this appliance gets a lot of use in our house, especially in summer. Smoothies are the perfect summer snack or lunch for hot, busy days. We especially love a powerful blender like this one because we can add big handfulls of greens to any smoothie and they completely disappear among the other ingredients!
