When you know how to do a St.Patrick’s day work potluck right: Colcannon from The Domestic Man (mashed potatoes with kale) and Baileys Irish Cream Brownies from TexanErin. Both were a huge hit! Both these recipes would be great for the Easter menu as well!
We’ve had a super busy week, and these Lengua Carnitas bowls (better than Chipotle!) using… that’s right, tongue, were actually really easy to whip up. You can find the recipe in Beyond Bacon. This is an incredibly delicious way (I wouldn’t say that if it weren’t true) to use organ meat! We topped ours with lettuce, grass-fed cheese and sour cream, and avocado. We usually do one toungue and a piece of shoulder meat, mixed up – because 1 tongue isn’t enough to feed our family of 5.
Because we’re putting our house on the market (eek! it was our first home, we’ve been here 8 years), we spent last weekend cleaning and organizing non-stop. While we were working in another area of the house, the booys made an “epic fort” in their room – using duct tape! I almost lost my mind… until I remembered they were playing nicely together and being adorable. Perspective can never be underrated!
We’ve had a lot of quick and easy meals lately… as our dining room is full of packing stuff. But we still managed to pull together a healthy paleo-friendly dinner & squeezed in to the kitchen eat-in table! Chicken salad from Eat Like a Dinosaur made with Chosen Foods Mayo over organic greens. Made with stoore bought rotisserie chicken, this was a quick 5 min meal!
