Weekend Wrap-Up, 8/30

Every Saturday we bring you a blog rendition of some of our favorite things going on this week in our own world and in the paleo world at large in a Weekend Wrap-Up. Every week we will feature our favorite paleo recipes from our archives and from other paleo bloggers that are  on our minds lately, as well as a few coupons for products we personally love, and some suggested reading for things we found interesting this week. Back to School!

This week the boys went up to our local school and met their teachers for this school year. We know that it’s late for most of you, but here in Virginia we’re starting school on Tuesday. We’re definitely going to miss all the time we spent with these fellows this summer! We are headed off to the Lake this weekend for one last Summer Vacation! See you guys on the other side!

These days, when we get together for a holiday weekend, the recipes HAVE to be simple. While at one time we might have planned elaborate Paleo celebratory meals, we realized that sometimes the simple recipes are the best, and they also leave time for what really matters – spending time with loved ones. We came up with both of these recipes this summer around holiday weekends, and they are quickly becoming staples for gatherings.Smoked chicken can’t get any easier with our simple recipe that includes a rub made out of common pantry spices that you probably already have! And the recipe for Creamy Ranch Coleslaw is diary-free, and easy to make ahead -in fact it gets better with time! This zesty and crunchy slaw  won’t give you an MSG headache like the popular ranch dressing mix. Need a few more ideas to round out the meal? As much as we are in denial, Russ and family from The Domestic Man are relocating with the Navy to Florida in early October *sad face*. So, what better way to say farwell than with a giant potluck?!

Labeling nightshades (peppers, spicy herbs, tomatoes, eggplant, and white potato) as well as nuts is super helpful too! Best yet, label the dish with the name and ingredients (if you’re an overachiever).
