It’s summer-fun around our house! Here’s what you’ll find in this week’s newseltter:
So much yum! This sweet and tart lemon pie was the perfect summer treat. We didn’t write down the exact recipe, but it was adapted from the Key Lime Pie recipe in Real Life Paleo. Creamy, not too sweet, and incredibly REFRESHING!
We’ve been regulars at the local pool this summer since the boys finished school- and it’s been a blast! I’ve learned over the past few years to love my body for what it can do– no matter its size, amount of loose skin, or how much flab I think I have. Because right now I’m LIVING MY DREAM! To play and be active with my boys was a goal from Day 1. And without this body, it wouldn’t be possible. Synchronized diving, swimming laps, and playing in the water with my loves… THIS is why I Paleo!
Part of feeling my best is drinking lots of homemade broth (yes, even in summer!), relaxing as much as possible, and enjoying things like watching the boys play and taking in the incredible smell of fresh flowers. It’s the LITTLE THINGS that make all the difference sometimes!
Since the boys have been home on summer vacation, we’ve been doing more baking. We’ve got a lot of recipes- between the blog and our cookbooks we’ve written HUNDREDS! And although we hate to play favorites… our Creamy Coconut Chocolate Chip Macaroons are right up there, dare we say one of our BEST?! Great for picnics, potlucks, and Tuesday nights! Our Favorite Products to: Help Your Kids Eats Their Vegetables
It took years for our boys to become the great vegetable-eaters that they are today. They eat things like salads, broccoli, and brussels sprouts without complaint, but it wasn’t always this way! We’ve rounded up some of our boys’ favorite ways to get their daily servings of veggies! We think your kids will like them too!
Wholly Guacamole is pre-made guacamole that’s creamy, doesn’t have too much spice, and is great for dipping all sorts of fresh veggies (carrots are a favorite in our house!). A veggie that helps them eat other veggies = real food win!
Sea Snax are something our boys have been eating for years! You can crush them up and use the crumbs as “sprinkles” on various foods, teach them how to wrap one around lunch meat, or simply hand them a small sheet to munch on. It’s salty, crispy and fun to eat.
Jackson’s Honest Sweet Potato Chips are made with only sweet potatoes, coconut oil, and sea salt- totally clean, and a great way to introduce… well, anybody to a healthy alternative . Crispy, salty, and good with just about anything!
Bubbies Pickles are not only a creative and fun way to eat your veggies, but they have the added benefit of being fermented and full of good bacteria! Try wrapping one up in a piece of ham or roast beef.
Pure Fruit and Veggies Strips are a perfect sweet treat, and with no added sugar this fruit leather with added vegetables is a household favorite of ours! Bonus: no one will even know there’s veggies in there!
