Pete’s Paleo Bacon and Corned Pork Potato Hash

A while back we met Pete and Sarah Servold at a paleo conference and were surprised to find out that we had an actual trained chef in the paleo community! As I’ve said before, I am completely self-taught and so are many other food bloggers out there. Corned Pork Hash on PaleoParents

But that’s not all. Pete also makes his own bacon. Cured from quality pastured pork belly and smoked, you can’t go wrong with Pete’s bacon. With Stacy’s mom in town last week, it was the perfect opportunity to try out this famous bacon in a couple of ways to truly enjoy it!

Braised Bacon on PaleoParents

The night before, I set up a pot for the oven and we used Pete’s Bacon to make The Domestic Man’s Cider Bourbon Braised Bacon! We subbed out Bourboun for gin and added some orange juice because it’s what we had on hand, and holy goodness was this just perfection – the combo of Pete’s amazing bacon and Russ’ award-winning recipe was a tastexplosion.

But we did not stop there. I diced up that bacon to make a recipe Stacy calls “Corned” Pork Hash because she says the cured bacon replicates the taste of corned beef hash, one of her childhood favorites.

Corned Pork Potato Hash

Serving Size: 4-6

Ingredients

  • 1/2 lb. Pete's Bacon (or other slab bacon or thick sliced pancetta)
  • 4 potatoes*, shredded or diced finely
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • optional: 1/2 teaspoon dried thyme
  • optional: 1/2 teaspoon dried oregano

Instructions

  1. Preheat a large skillet over medium-high heat.
  2. Dry potatoes out by laying them out in layers on a moisture-absorbing towel and squeezing as much water out as possible.
  3. Meanwhile, fry cubed bacon until browned on each side.
  4. Add potatoes, onion, spices and toss to combine.
  5. Fry the potatoes until bottom browns. Stir the potatoes and continue to brown. When browned to desired doneness, remove from the heat. We recommend a dark brown to get the best part: crispy pieces!
