Garden Update and Goose-Egg Scramble

We’ve been watching our garden grow.

We aren’t diligent garden pruners, we have not mastered the art of botany, and we do not have the time or patience to worry about (gasp) weeds! But by golly our garden grows anyway.  Amazingly, all plants need to provide you their bounty is a bit of natural rain water and bright sunshine.

The old adage of, “If we can do it, you can to!” definitely applies here.  And hopefully what you’ll end up with are some goodies to add to your own body to make it grow healthy and strong.  As a result of our flourishing garden, we have recently ended up with lots of onions and are learning how to use their tops (waste not).

When the kids found goose eggs at our local farmer’s market, the idea of a goose egg scramble with onion tops as greens (paired with Elana’s Pantry’s Cinnamon Crumble Cupcakes from her new book) for Sunday morning brunch seemed the perfect idea.

The boys love trying new things. Just today we discovered acorn squash at the store and Cole immediately identified that it “looks like the thing the squirrel wants in Ice Age.” Shortly after, he’s skipping along talking about acorns and evolution of animals. Simply by engaging him in exploring food, he wants to be adventurous with it. Expectedly, when he heard a farmer offer goose eggs at our local farmer’s market, he was quite passionate about our need to try them.

Cole in particular was so excited he actually busted the yolk of the goose egg before cracking it with the sheer velocity of his excited, anticipatory shaking.


But we whipped the eggs and poured them over sauteed sausage, sweet potatoes and onion greens for an amazing scramble. The boys did great at stirring the eggs until cooked.

Goose Egg Scramble Recipe
dairy-free, fish-free, peanut-free, shell-fish free, soy-free, treenut-free, wheat-free

  • 1 lb. pork breakfast sausage
  • 2 medium sweet potatoes
  • 2 scallions (we use the onion greens growing in our garden)
  • 2 goose eggs (1 emu egg , 4 duck eggs or 6 chicken eggs)
  1. Peel and dice sweet potatoes
  2. Slice onions
  3. ♥ Sauté sausage and sweet potatoes over medium until potatoes are soft, about 10 minutes; if your sausage is not fatty enough add a tablespoon or two of the oil of your choice – little hands are great at stirring occasionally!
  4. ♥ Add scallions once sausage is brown and sweet potatoes are cooked through
  5. ♥ While waiting for mixture to cook, crack and scramble eggs, making sure lots of airy bubbles are added
  6. ♥ Pour eggs over sausage mixture, stirring continuously and cook until eggs are done (about 5 minutes)
