Beyond Bacon, Paleo Recipes that Respect the Whole Hog

I’m sure you’ll notice, this cookbook’s a little different than our last. So, here’s the back story.

It was almost 2 years ago we started thinking about our first cookbook. The important things to us, at that time, were the drastic health improvements we’d seen in our kids. With a completely changed diet and lifestyle we wanted a fun, family-oriented cookbook our kids could use to feel empowered to make good food choices.

We’d never envisioned ourselves cookbook authors and the thrill of the opportunity was one of those life-altering moments. The paleo market wasn’t yet filled with all the wonderful resources it currently is. Our point of view was distinct for that book; we created unique and fun recipes that family members of all ages could enjoy.

Our point-and-shoot camera didn’t quite capture the food the way we’d hoped, but we remain extremely proud to have Eat Like a Dinosaur as our first book – dedicated to our 3 fun, energetic and healthy boys. The friendships we established during that creative process have had a profound impact on our lives. They changed our health, but they also changed what our priorities were.

Why this cookbook?

These days we have a passion for food quality. Our visit to Mount Vernon Farm and Polyface last year sparked a passion in Stacy for sustainable farming. Healthy fats and protein from pastured animals have greatly improved Stacy’s digestive health. But it’s not cheap – so we began buying whole animals to make it more affordable. Committed to using every part of that animal, out of respect, brought us to where we are today.

The paleo community loves bacon. But pastured pork is the most affordable per-pound meat we could find. When your chest freezer is full with whole pastured pigs regularly, you learn to cook it all. And we mean ALL. Like most great partnership marriages, we found a happy place where Stacy’s passion for pastured pork met with Matt’s talent to cook it – and now, a book baby will be born.

Beyond Bacon by Stacy Toth and Matt McCarry the Paleo Parents

Beyond Bacon pays homage to the humble hog by teaching you how to make more than a hundred recipes featuring cuts from the entire animal. While bacon might be the most popular part of the pig for those following the paleo diet, there is a plethora of other delicious and nutrient dense cuts to enjoy.

Pastured pork is rich in Omega 3 fatty acids and conjugated linoleic acid (CLA), the “good fats” our doctors want us to eat – not to mention high in Vitamin D, a deficiency for most Americans.  Beyond Bacon breaks the myths behind this often eschewed meat and shows you how create delectable dishes that are grain-, legume-, dairy-, and refined sugar-free.  Beyond Bacon allows you to improve your health and the environment by focusing on sustainable swine.

  • instructions for curing your own bacon, pancetta and even home-made sausage better than store bought,
  • details on how to properly fry foods, like Corn Dogs with Sweet Potato Crisps and Sweet & Sour Pork, and
  • an extensive guide on how to make and cook with the nutrient dense essentials: pork stock and CLA-rich lard.

The best part for you, other than the food, is going to be the drool-worthy food photography.

With friends like Primal-Palate, Civilized Caveman, Nom Nom Paleo and Against All Grain – we’re able to admit our own photography (featured on our blog and in Eat Like a Dinosaur) isn’t quite up to par with the vision we had for this book. We wanted a rustic aesthetic, inspired by antique farmhouses – like some of my favorite food bloggers on my Food Photography Pinterest Board: Roost, Gourmande in the Kitchen and The Urban Poser.

That’s where our professional photographer friend Aimee of Aimee Buxton Photography came in. We took a nod from Diane of Practical Paleo on this one – if you’ve got talented friends, let them help you out! It is Aimee’s talent behind the camera that’s made Matt’s mouth-gasm worthy recipes into food porn on the page. We’re hoping with our powers combined, you’ll get the total package of a top-notch cookbook – paleo or not.

Now, let’s get this straight. We’re still Matt & Stacy. Our site got a little facelift, but we will continue to be The Paleo Parents. Our kids have eaten and loved every recipe in Beyond Bacon. In fact, quite a few of the recipes have been featured on this blog already. We just packaged them a little differently for book #2. If you click the photos below, you’ll be taken to the originally posted recipe that we transformed for Beyond Bacon. (Hint Hint: If you want a sneak peak at Beyond Bacon Recipes, we’ve tagged them on our site…)

Beyond Bacon will be released July 2, 2013 in all major bookstores – just in time to get your grill & smoker going!

Last but not least, we’re super excited that, like most top rated cookbooks, Beyond Bacon will be released as a hardback. That means it’ll stay in place better on your recipe stand and be tougher for all that use in the kitchen. It will also, hopefully, be a stunning piece of art you can share with friends and family. Because, any diet that encourages the eating of fatty hog meats will probably be a welcome proposition for them!

To summarize:

  • Beyond Bacon will be released as a hardback July 2, 2013 and feature paleo (grain-, legume-, dairy-, refined sugar-free) recipes from the whole hog –  it will teach you how to understand ordering a whole animal, our suggestions for finding a farmer, a breed of animal, the cuts you’ll need to order and how to cook any parts (including offal, bones and fat) that the deliciousness of a pastured pig provides.
  • Aimee Buxton, our photographer, is offering serious foodies an opportunity to enjoy the food as much visually as you will when you taste the recipes.
  • This will be THE recipe book you NEED next summer. Honestly, if you don’t get an opportunity to eat the smoked pork belly, make your own sausage, and make The Best Brownies topped with Frozen Custard and Salted Caramel Sauce your life may, in fact, be incomplete.

    I am sure that your new book will be successful and I am so excited to try it (and yes, I have pre-ordered). But we have recommended “Eat Like a Dinosaur” to SO many friends that have just fallen in love the with concept and the recipes and the book. I LOVE getting phone calls from my friends stating that their kids who are picky eaters just ate a recipe from the book. My own children are huge testimonies of “Eat Like A Dinosaur.” For the past six months, it has gone with us into stores, in the van, and a recipe is used at least once a day from that book. So even though the new cookbook might be more sophiscated, we still LOVE, LOVE, LOVE the simplicity and the education behind “Eat Like a Dinosaur.” And now we are so excited to see what you have next for us.     The site redesign is evidence of your growth – it’s sophisticated and I like that. I am excited to see Beyond Bacon, as well because I firmly believe in using the WHOLE animal. You two (Stacy and Matt) have imagination, and so many people lack that.

    I love the facelift of your website! I’m thrilled with how well you guys are doing with your endeavor. My friend, Courtney, introduced me to Paleo and then to your website, etc. a year ago and it’s been fun. Eat Like a Dinasaur is such a fun book and we like a lot of the recipes in it.     Can’t wait for the new book! I was told about Eat Like a Dinosaur when I was having some major stomach issues that landed me in the E.R. 4 times… No diagnosis. Since eating paleo/primal, my stomach issues have disappeared! I have recommended this book to so many people, and I am sure I will the next one too!

    The blog facelift is very swanky! I do think on the home page the mix of the old and new is a bit jarring – the dinosaur & family seem to be in a post-apocalyptic landscape with the black & white background.

    This sounds awesome! I started to leave pork out for a while based on some stuff I learned on how to eat for your blood type, and pork was something that I shouldn’t have.     I wanted to thank you for your blog, podcast and ELAD. I have been paleo for two years now and it has really helped my IBS and low iron levels. We found out this year that our 5 year old son has Asperger’s syndrome and have started him on the GAPs diet but it was when I read ELAD with him that he really took ownership of his own eating and this was thanks to the information you guys give in the book. Looking forward to the new book! We try to eat “nose to tail” as much as possible.

    I am extremely thrilled about the release of this book. After about four years of feeling extremely isolated from any type of healthy foods and locally sourced products, I recently discovered a rancher in my area that sells whole pigs. My husband and I are planning on purchasing our own pig in the spring that will be raised through the year and ready for consumption by next winter. Your new book will be the perfect accompaniment! The pictures look gorgeous and a hard cover will certainly make this a beautiful addition to my Paleo kitchen library. Really looking forward to the book’s release next summer.     Since I’m not a parent, I haven’t visited your site before, but I like the way it looks! I’m super-excited that you’re writing a book to deal with pork beyond bacon! I keep wondering why the rest of the pig is so rarely mentioned on Paleo sites.     Since I only accidentally found your blog and this is my first visit, I have no idea how it looked before today. However, I love the chalkboard look and the down home earthy, natural feel of the blog. I also appreciate the white space and clutter-free appearance.

    Well, now I’m off to investigate your blog to see if you have any posts about how to stop wanting cake, fluffy wheat bread and what used to be my staple breakfast, Healthy & Moist Baked Apple Blueberry Oatmeal, which I guess wasn’t as healthy for me as I thought it was….Substitutions just aren’t like the real thing. *sigh*

      Our most popular breakfast recipes are Grain-Free Granola and Cinnamon Apple Hot Cereal – which I imagine you’d enjoy a lot 🙂
      There’s lot of baked good options on the site for replacing the sweet stuff, give yourself time and you’ll want it less and less as you get the refined carbs out of your system. Good luck & welcome!

    I haven’t explored the features & new look of the site yet, but at first glance it looks great. I’m looking forward to Beyond Bacon. We already eat quite a bit of pork, so new ideas and recipes are welcome. My mom lived to age 94 and her favorite meal was pork–ribs, roast, bacon, green chile! Even when she had problems with her teeth and not much appetite, she never seemed to have a problem if the meal included pork! She would share anything except her bacon! And I like that it will be hardback.

    I am a big proponent of getting back to the days of using ALL of an animal, but I wasn’t taught many of those recipes growing up (and then was a vegetarian for too many years!) Looking forward to a paleo cookbook that doesn’t rely on chicken breasts and ground beef!

    I completed 8 of the 10 steps, Pinterest’s servers were giving me fits and I couldn’t log in and I have to wait until tax return to purchase all the books on my Amazon wish list. I love the site, it’s very beautiful and inspiring. Beyond Bacon, I can’t wait since we do eat a lot of pork. We do buy from a local producer and they do in house slaughtering, but they are not fully pastured they do live some of their life in a barn. When we purchase I freezer I hope to then buy a whole or half pig that is from a ranch that has fully pastured pigs.

    Your site looks beautiful and i am SO excited for your new book. We raise pigs for meat (just for our family) and I could use some new pork recipes. I’ve gotta try that pig liver gravy. Yum!     I’m glad to see you embracing and promoting full utilization of animals. Since we began raising our own meat a few years ago, we too have switched to eating the whole animal, not just the convenient/popular grocery store cuts. We’ve done this for both economic efficiency and the health benefits of organs, but also out of respect for the animal that none of it’s life is wasted. Thank you for promoting this!
