It’s our first year NOT at Paleo Fx. But, with all of Stacy’s travels it’s great to be home, relaxing together. We’re looking forward to a long weekend with great food and lots of fun! Need last minute ideas? We’ve got the best warm weather recipes and other Paleo summer essentials!
Our Real Life
I had a phenomenal trip to the Mediterranean with my dad and sisters, but gosh is it nice to be home! One of my last meals before heading back to the states was this Salmon, Brie, Walnut and Balsamic Salad. Even though it was an awesome salad, I was still a little jealous of my sister’s freshly made giant tortellini. Just… one… bite? Nope, didn’t do it!
Not worth the pain I’d feel on the way home, during that 2 + 12 hour flights! Our layover was in Istanbul, where I found this simple meal of chicken, white rice, and soup loaded with greens – it was the perfect fuel to get me through the long flight, since the airline meals weren’t anything I could eat.
I am happy to report that overall I was able to enjoy a lot of great food without getting sick and made it home feeling great (besides the jet-lag!), even with almost-daily cappuccinos and gelato. When in Rome, right?!
After seeing (NOT gluten-free) Calamari all over the Mediterranean, I knew it was one of the first things I wanted to have when I got home. It’s ridiculous how easy this is to make, and how delicious and crispy and wonderful it turns out! We just toss thawed squid pieces (we buy them pre-cleaned and frozen at the Asian market) with Otto’s Cassava flour and fry it in our mini deep fryer – it only takes a few minutes, and everyone loves it.
But, it wasn’t just Mediterranean food I wanted. After being away from home for two weeks, all I wanted was comfort food and Matt’s home cooking! Perfect Pork Chops (another incredibly easy recipe), and meatloaf with our Fauxmato Sauce were on the menu this week!
We’re looking forward to a long weekend filled with family, boy snuggles, strawberry picking, more comfort rood, relaxation, and remembering our those who died for our freedom to enjoy such things.

PALEO Summer Essentials
Summer is here, school is out and we’ve got picnics, camping, hiking, days at the park and grilling on our minds! Here are some of our essentials for having fun and eating well this summer!
Insulated Cooler Bag – we love day trips, shopping at the farmer’s markets and picnic-style lunches together… and an insulated cooler bag is essential for keeping the food chilled. Plus, this one is super cute and functional!
Ice Cream Maker – we couldn’t talk about summer essentials without mentioning one of our favorite machines: an ice cream maker! Inka Plantain Chips – a staple in our house, these plantain chips are especially great for warm weather. Perfect for road trips and quick summer lunches, and a great side dish that won’t heat the house up cooking in the oven. And they’re the ultimate vehicle for guacamole and other summer dips, salsas and spreads!
KC Naturals Mastadon BBQ Sauce – this is a newer product that we’ve been enjoying this grilling season. It’s AIP-friendly, which means no tomatoes, and only the cleanest ingredients! We love that this BBQ sauce is something the whole family can use. It’s great on chicken, ribs, pulled pork, and whatever else you want to cook over an open fire!
Steve’s Dried Strawberries – these strawberries go with us everywhere! They travel really well, and are the perfect not-too-sweet treat for car trips, or as a pick-me-up when we’re our running errands. These strawberries are one of our all-time favorite products, and one that we never let run out!
