School’s out for SUMMER! Let’s get right into the summer mood shall we? If you’re looking for easy and quick clean up, this meal plan is it. Sheet plan meals to the rescue! Still completely full of summer flavor! I love a good easy clean up meal especially when we’re in the throws of planning for our big road trip.
Meal Plan for the Week of June 14th, 2021
Total unique veggie count for this week’s meal plan, just for dinners: 41! Add a green smoothie, salad for lunch, or snack on some fruit to get you even more! We build our plans to have a variety of proteins and diversity of fruits & veggies. You’ll get even more variety in your breakfast and lunches, exceeding the goal for optimum gut health diversity of 30 servings per week.
MONDAY
- Sheet Pan Tandoori Chicken from Nom Nom Paleo
- Turmeric Rice from A Clean Bake
I really love introducing kiddo to new flavors and showing them the depth of their palette. This dish from Nom Nom Paleo combined with the Turmeric Rice is just so delicious – all the kids love it! TUESDAY
- Sheet Pan Fajitas the rest of the family loves their crispy corn shells but I use the Siete brand crispy or soft!

WEDNESDAY
- Peach and Blueberry Greek Yogurt Cake (we will sub for GF AP Flour)
- Aidell’s Chicken Sausages and scrambled eggs with spinach, mushrooms and onions.

THURSDAY

FRIDAY

SATURDAY
- Fresh from the market Steak Cobb Salad with Creamy Avocado Dressing from Paleo Running Momma
Saturday market strolls are just feeling so good lately. I feel like across the country the garden bounty is really starting to thrive. What varieties are in season where you are? SUNDAY
- Mexican Spiced Pork Tenderloin from Balanced Bites, we use our Magical Smoky Spice Blend

- Grilled Peach and Ginger Ice Cream
It’s our Father’s Day Feast! Matt chose this menu and I have to say none of us our complaining about it. Peaches may not be at their peak yet but they’re still delicious. We use the Balanced Bites seasoning blends for a short cut in our pork tenderloin, and you can too! About our weekly menu
You are not alone in your struggle to put healthy meals on the table without spending all day in the kitchen. Trying to get in a variety of fruits, veggies, and protein while using local, seasonal ingredients, not to mention a variety of proteins and healthy fats, while not spending all day in the kitchen. Work, virtual school, parenting, maintaining social relationship in a time of quarantine… life is hard enough without the additional stress of what to meal plan and cook. But that’s why we’re here!
You can read about how we meal plan to do your own, or you can use each weekly post as your own menu or just for inspiration. Not every meal, every week will work for you and your family. But, I hope at least I can recommend some new, fun things and provide inspiration for your family to plan ahead in a way that works for you. We hope your whole family enjoys!
