We couldn’t have asked for a better trip- the boys were unbelievably well behaved, and we all bonded and had a great time exploring and making memories. The excitement and happiness in their faces made me cry out of joy. Severa times… #momproblems

More than anything, this trip was for Wesley. For the past entire year, he’s been talking about Harry Potter World (almost daily!) and how badly we wants to be able to go on the rides there. After we explained to him that eating more vegetables would help him grow faster and reach his goal, this kid was ON IT. And he didn’t let up! Requesting strawberry salad for dessert and eating plenty of veggies for dinner without question- for months and months!
We finally realized he had reached his goal and was tall enough to enjoy (almost) all that the theme park had to offer, so we planned an end-of-summer surprise trip. We’re happy to report that he (and his brothers… and us too!!) had the time of his life! Repeatedly he told us it was the best day of his life (each day) and we overheard him telling other children to eat their veggies to get ta, strong & healthy too!
And he learned some great life lessons: 1. eating vegetables is associated with great things. 2. working hard for your goals and never giving up pays off.

We were glad to feed our Pokemon Go addiction in Florida too! There were a lot of hot spots and we had a blast collecting all the Pokemon we could and we wandered the parks! A whole other layer of fun and excitement added to our trip! If you haven’t caught the buzz yet our recommendations are: 1) do it as a family to ensure safety, and 2) have fun getting out there with your community to utilize modern technology for a healthy lifestyle <3
Some of Our Favorite Ways to Eat Our Veggies!
The Spiralizer is an incredible way to make vegetables more fun for kids and adults. If you’ve never seen one, it turns just about any cylindrical veggie into spaghetti-like strands, and the most popular is zucchini. We love “zoodles” topped with clam sauce, tossed with ghee and shrimp, and in soups.
Pure Fruit and Veggies Strips have the benefit of being fruit-based, so they taste sweet and anyone (especially kids) will love them; plus they have the added bonus ingredient of vegetables. File this under vegetables in disguise, and sometimes there’s nothing wrong with that!
Sweet potatoes cooked in coconut oil – Jackson’s Sweet Potato Chips are a great way to get in healthy fats and veggies. These are the perfect side for easing picky eaters into eating more vegetables, and a lunch-time favorite in our household!
My vote for most underrated vegetables: sea vegetables! They have a whole different profile of nutrients than things that grow on land. Sea Veg Sea Salt is ground seaweeds with sea salt, and I use it nearly every day to add more minerals and vitamins to my diet. On salad and eggs are my fav!
