This week’s meal plan is entirely from the web – which means you can make all of these awesome recipes without needing any cookbooks! Since we know not everyone has all the recipe books we use, we wanted to make sure we included some meal plans with recipes that ANYONE can make.
There are a few old favorites in this meal plan, along with some brand-new-to-us recipes! We find that this makes for a good balance, as making all brand new recipes every week can be overwhelming, and making only ones we’ve eaten before can become boring over time.
There are so many great Paleo recipes out there, for more inspiration follow along on Pinterest, as we are always pinning drool-worthy Paleo eats!

This week’s dinners were:
Monday: Chicken Teriyaki Bowls with Steamed Veggies

—> Steamed Veggies (no recipe, just steam ’em until tender!)
A classic recipe from our friend Russ of The Domestic Man, plus we added a big serving steamed veggies on the side. Leftovers for lunch the next day were awesome too!
Tuesday: Grain-Free Salmon Cakes, Crispy Baked Potatoes and Roasted Brussels Sprouts

—> Crispy Baked Potatoes (cut up potatoes, toss with fat of choice (we use Chosen Foods Avocado Oil) and salt, bake 400F for 25-30 minutes)
—> Roasted Brussels Sprouts – halve and toss with fat of choice (we use Chosen Foods Avocado Oil) and salt, bake 400F for 25-30 minutes
Fried until crispy and golden brown, these salmon cakes hit the spot – even for our kids who are usually fish-resistant. For sides we tossed some veggies with Avocado Oil (lard or bacon fat is great here too!) and roasted them in the oven. A simple and delicious dinner!
Wednesday: Deep Dish Pizza with Tomato-Less Marinara and Salad

Oh hello deep dish pizza!! Otto’s Cassava Flour makes the crust crispy on the outside and soft on the inside- clearly this was a big hit in the household! Toppings are: broccoli and bacon, pepperoni and mushroom, and pepperoni and pineapple. Yes, we’re weird, but that’s OK. We eat the pizza toppings we love, no judgement.
Thursday: Chicken in Mushroom Sauce

So… real life happened and we didn’t end up making this for dinner Thursday. Finn got his cast taken off this day (after only 3 weeks! hello healthy, strong bones!), so while we were out, we had celebratory lettuce-wrapped burgers at Freddy’s Frozen Custard and Steakburgers. No worries, we’re adding Lexi’s Chicken in Mushroom Sauce to a future meal plan!
Friday: Maple Orange Brisket Bowls

Brisket is quick-cooking in the Instant Pot! With maple sugar, orange juice and garlic, there was so much yum in these bowls – my favorite part was mixing in the flavorful slaw on the bottom!
Saturday: Horseradish Mustard Ribs, Green Beans, Watermelon

—> Steamed Green Beans with Ghee
No smoker needed to get wonderfully tender, AIP-friendly, and incredibly flavorful ribs! We rounded this meal out with simple green beans and watermelon (a celebration of the warmer weather!).
