Hi Friends- here’s a look at our week!
We wrapped up our trip to Orlando with an Easter Brunch, complete with Disney Junior characters and gluten-free Mickey waffles! It was a great send-off for the long trip home.
For our last meal on the ride home we couldn’t find ANY DECENT MEAL OPTIONS for over an hour, so we ended up stopping at Wal-mart. We got salads, rotisserie chicken, and fresh fruit; which was cheaper and healthier than trying to navigate any of the fast food options we saw. If you’ve been eating Paleo for a while, you can appreciate the artful skill of somehow growing a third arm and eating full meals while driving!
We had SUCH A GOOD time, but are delighted to be back sleeping in our own beds and eating Matt’s home cooked food. Look for a whole Disney recap post on the blog soon!
It’s been back to reality here for nearly a week now, which means daily lunch salads for Stacy. And whether from home or from the office deli salad bar, she’s loading them up with good things like a TON OF LEAFY GREENS, along with nuts and dried fruit, like cherries. However, Stacy has been missing all the walking (we routinely logged over 20,000 steps per day on vacation!) so a little lunch break walk outside in the sunshine was in order this past week.

The authors of Yiddish Kitchen announced this week that their ebook (which is on sale for $9.99 right now – see below) will be going to print! Let’s talk about our recommended SEVEN SUPER FOODS. We define these and give tons of recipes for them all in Real Life Paleo, but here’s a practical application for how to add them into your life.
Gut health is everything. I’ve been on both sides of the line: being sick and at times unable to enjoy life to now being an energetic mom of three boys who has put multiple autoimmune conditions into remission —> Read more about that here.
When I focused on healing my gut, not only was what I eliminated from my diet important, but also what I PURPOSEFULLY PUT INTO IT! And that’s when the real healing started to happen.
BROTH (STOCK) /GELATIN
You may know me as “The Broth Lady,” so its not a surprise that it is one of my favorite super foods. I get it in a few different ways; bone broth that we make at home (now using the Instant Pot for this and love it!) and drink straight-up or make into soup. Or from trusted vendors, like Pete’s Paleo and Pacific Foods – great for those who aren’t into making it yourself. Don’t feel bad about TAKING THE HELP WHERE YOU CAN GET IT!
I also add Vital Proteins (powdered collagen, which is the healing protein in broth) to my beverages throughout the day. Of course the FUNNEST WAY to get gelatin in your diet is with gut-healing gummies!
ORGAN MEATS (OFFAL)
I didn’t always like organ meats, but I do now. We have several recipes on the blog that incorporate these healing, nutrient-rich cuts (like Spaghetti Squash with Offal Sauce). And we’re also loving the new Epic Liver and Beef Bar: no livery taste at all! If you are SCARED OF LIVER and want to ease into it, this is the product for you.
SEAFOOD & PASTURED PROTEIN
Increasing my omega-3 intake has been great for my overall inflammation and gut health- and my favorite way to do it is with seafood! We go out for sushi or make it at home sometimes, but otherwise I use Wild Planet canned Tuna and Salmon because it. is. so. easy. Follow me on Instagram and you’ve likely seen my daily lunch salad with big ol’ pile of seafood on top!
Other proteins with a high ratio of Omega-3 to Omega-6 fatty acides are rumanent animals, like cows, deer, and lamb. Even pastured, organic chicken has MUCH more Omega-6 fat than standard CAFO beef – yikes!
As creator of the hashtag #morevegetablesthanavegetarian, veggies have been a huge part of improving my gut health. We’re a family that fights over who gets the last serving of brussels sprouts! Whether you sneak them into cake, or make them into a main part of every meal (highly recommended), you just gotta have ’em.
HEALTHY FATS & EGG YOLKS
Healthy fats have been another healing superfood that has helped me greatly. Lard from pastured pork and egg yolks from pastured chickens are high in vitamins, especially Vitamin D, and have been instrumental in my improved gut health. If you’d like to add more lard into your diet, start with these Sweet Potato Drop Biscuits and grab Beyond Bacon (now at Costco!) for ALL THE LARD recipes you could dream of!
