Hi Friends- here’s a look at our week!
We had a great time last weekend at our hometown Costco, signing books and meeting all of you. And the boys got to be there too, which always makes it extra special! Other than local markets and direct from farmer’s, we do the majority of our weekly shopping at Costco… because, well boys = bottomless pits who are ALWAYS HUNGRY (even after scarfing down whole racks of ribs and bowls of veggies!). While we were at the signing last weekend, Finn was flipping through Beyond Bacon and begged us to make the Smoked Spare Ribs. That was the BEST IDEA ANYONE HAD all week! See? I’m telling ya, kids are smart.
Finn and Stacy enjoyed a nice lunch out after her talk at the Celiac meeting last weekend, his reward for being such a good helper. OH THE IRONY! This picture was taken as Finn was being “poisoned” (by gluten) which may sound dramatic, but is the best way to describe how our bodies react to it. He wolfed down half the sandwich before we realized that it just didn’t look right. It was lots of bone broth and kombucha for him for the next couple days. Fortunately, his body didn’t react violently, which means after 5 years of Paleo his body is healing and recovering much better than years ago! Good lesson for us to remember to be very specific, even if it feels annoying or bothersome to restaurant staff. After doing this for so long sometimes we take for granted how we need to communicate. Oh well, live and learn, but henceforth we’ll be scrutinizing everything much more closely! Also, none of this couldn’t have happened if we didn’t order gluten-free bread… so while we’re not paleo perfectionists, it’s a reminder on why eating things naturally gluten-free AND paleo is always the best choice!
And on a MUCH HAPPIER NOTE, we had an awesome family session at House of Gainz (our garage gym) complete with tire-flipping and sledge-hammering (pvc pipe for the boys) in the fresh spring air. Spending time together as a family while improving our health is something we treasure. Stacy made a commitment years ago to be strong and healthy, and she loves being able to share that with the boys.

Is there any food more worthy of the title ‘worth eating’, than Chocolate? And you don’t ever have to feel bad about it when it is in healthy forms from healthy sources!
The desk-drawer must have: chocolate bars. My favorites are Midnight from Alter Eco and any and every flavor that Hu Kitchen makes (but the absolute best is Crunchy Banana!).
Our family also really loves the coconut butter cups from Eating Evolved– especially the caramel and mint!
For sippin’ I’ve fallen hard for brewed cacao. So, it’s cocoa beans that you brew like coffee and it has the same earthy, bitter, satisfying flavor that coffee does. If you don’t tolerate coffee, this might change your world.
For baking, we use Equal Exchange Bittersweet Chocolate Chips because they are the only fair-trade dairy-free soy-free chocolate chip we’ve found without emulsifiers. For making things like Brown Velvet Cake or flavoring protein smoothies, we like to use this Raw Cacao Powder for its health properties and rich chocolate taste.
And because it’s just plain ah-maze-ing, we love Nikki’s Chocolate Hazelnut Brownie Coconut Butter. All this requires is the jar and a spoon.
