Bacon Turkey Meatloaf
I dare you not to fall in love this one, we happen to be
meatloaf obsessed in our house, and this didn’t disappoint!
One of the most common questions we get is, “can I cook XYZ recipe in my Instant Pot?” Because Matt uses ours so much, he’s pretty comfortable at home adapting recipes to be cooked in it. One thing we LOVE about Paleo Cooking with Your Instant Pot is that by following the recipes in the book, you will get a great handle on the different ways to use your pot. By cooking from this book, you will gain the confidence to use your Instant Pot more regularly, and essentially learn how to cook whatever you want, and without necessarily following a recipe!
We have heard from so many people that they have an IP but either don’t use it at all (for fear or not knowing how) or only use it for broth. We wanted to show how easy and versatile it is, so the recipe below is also done live in the video above. Make sure to watch it if you, too, have any hesitations about using this ah-maze-ing device.
Ingredients
- 6-8 Large Sized Eggs (pastured recommended)
- 1 Cup Water
Instructions
- Plug in your Instant Pot and pour the water in the bottom of the stainless bowl.
- Put in a stainless strainer/steamer basket (there is one that comes with the IP).
- Place your desired number of eggs on top of the opened steamer basket in a single layer.
- Put the lid on and press the Manual button. With the "-" button, adjust it to 8 minutes on the display (2-6 minutes for softer center).
- Close and lock the lid, make sure the vent on top is closed. Let the IP do it's magic, and then quick-release the pressure valve.
- Let cool slightly and vent completely before opening lid (about 1 minute).
- Transfer eggs to immediately cool, either in an ice water bath or to the fridge.
