This week was all about simple meals! We’ve been busy getting ready to launch our new website (eeek!), plus it is the busy season at my day job- so dinners were mostly quick and easy this week! We like to make more involved dishes when time permits, but keeping it simple with quick cooking meats and veggie side dishes is nice sometimes too.

Here’s what we ate for dinner this week:
Monday: Bunless Burgers, Cinnamon Ghee Carrots, and Garlic Herb Green Beans
—> Burgers simply seasoned with salt and grilled.
—> Carrots steamed until just tender and tossed with cinnamon and ghee
—> Green beans steamed until just tender and sprinkled with garlic herb seasoning
No bun and no cheese needed when you slather your burger with Chosen Foods Mayo! Simple veggie sides were the perfect pair for this no fuss dinner. Sprinkling the green beans with Primal Palate Garlic and Herb Seasoning made them so good!
Tuesday: Waffles with Whipped Cream and Apple Butter, and Veggie Frittata

We love breakfast for dinner nights! We made fresh apple butter after visiting the orchard last weekend, and it was incredible on waffles and topped with whipped cream! An easy veggie-filled frittata rounded out the protein for this meal.
Wednesday: Roasted Chicken Thighs, Buttered Pea Pods, and Roasted Potatoes

—> Pea pods steamed and tossed with ghee
—> Potatoes tossed with Chosen Foods Avocado Oil and rosemary and baked until golden
Another simple but incredibly delicious weeknight meal! The rosemary roasted potatoes were quick to throw together and tasted like something from a high-end restaurant.
Thursday: Crispy Orange Pork and Veggie Fried Rice

This sticky, crispy orange pork is one of our favorite dinners- better than any take-out! We used up all our leftover veggies to throw together a quick cauli-rice.

We hosted dinner for our new neighbors, one is dairy-free and the other only eats seafood. No problem- we whipped a few of our favorite Asian dishes. They said it was great and even took home some leftovers!
Saturday: Mod Pizza
This was also a special meal- one that we let Cole choose because of his incredible progress in school and with managing his ADHD. We were blown away and incredibly proud when his teacher personally called to tell us how respectful, attentive, and helpful he is. He struggled in school for years, so this definitely called for a celebration! He chose Mod Pizza and a sleepover with his best friend.
Sunday: The Bacon Chicken with Cabbage

The perfect Sunday supper! This is a main dish and side dish all wrapped into one- the chicken wrapped in bacon cooks over a bed of cabbage (which makes it the BEST cabbage you’ll ever have!). We love this meal for leftovers too!
