Here’s what we ate for dinner this week:
Monday: Less Lasagna and Side Salad

We all looove Lasagna night! We always make this with our tomato-less marinara sauce, and this week Matt made an extra large batch of it so that we’d have some to use with Thursday’s meatballs. A good example of one of the ways meal planning saves us time!
Tuesday: The Bacon Chicken with Cabbage

One of household-favorite meals, especially when you slather the chicken with Tessemae’s Honey Mustard! The chicken is wrapped in bacon and cooked over a bed of cabbage- turning the cabbage into something magical that even the pickiest of eaters will enjoy!
Wednesday: Leftovers
We almost always build a leftovers night into our week! Everyone looks forward to leftovers for dinner because they can pick and choose what sounds the best. Plus, things like slow-cooked meats and casseroles like Lasagna are often better second day anyways.
Thursday: Spaghetti Squash with Meatballs and Side Salad

We took some help from our favorite local butcher this week with these pre-made gluten-free meatballs we picked up. All we had to do was prep a spaghetti squash, bake the meatballs, and add the marinara we made earlier this week for a super quick and easy dinner.
Friday: Out
On Friday night, Matt and Stacy went out to the big city to celebrate Brent from That Paleo Couple‘s Birthday!
Sunday Morning:
