This week’s meal plan is loaded with healthy comfort foods, and ALL the recipes can be found on the internet, so NO BOOKS NEEDED to follow along with this one! Since not everyone has all the recipes books we use, we try to make sure we have an internet-based meal plan once in a while, with recipes that ANYONE can make!

Here’s what we ate for dinner this week:
Monday: Clams with Zoodles and Salad with Berries and Almonds
—> Spiralized zucchini tossed with clams from Trader Joe’s frozen section
—> Salad with berries, slivered almonds, and feta tossed with vinegar and Chosen Foods Avocado Oil
This dinner took less than 10 minutes to whip up- which was perfect for a Monday night! So many nutrients in this meal, and the kids (and the adults!) licked their plates clean!
Tuesday: Orange Duck, Green Beans with Butter, Side Salad

—> Salad with whatever vegetables with have in the fridge, but you can find inspiration here!
Don’t be intimidated by cooking a whole duck, it’s actually very easy- and our recipe for orange ducks is incredible! Paired with a few simple veggie side dishes and we had ourselves a gourmet dinner!
Wednesday: Chicken-Fried Steak with Gravy, Mashed Potatoes, and Roasted Radishes with Candied Onions

We created a new roasted radish recipe (so good!) that we’ll be sharing soon, and it went perfectly with a fluffy pile of mashed potatoes and crispy chicken-fried steak all smothered in gravy. We’ll be putting this dinner on repeat for sure!
Thursday: The Bacon Chicken over Cabbage

We almost had a kitchen-fail on our hands when we went to make The Bacon Chicken and discovered we didn’t have any bacon! The horror! Matt’s genius idea to rub the chicken with lard instead saved the day, as it was still sooo good. Cabbage cooked alongside the chicken in the drippings and some simple roasted asparagus rounded out the meal!
Friday: Pool Party!
Friday was a party for the boys’ swim team, so we had to attend and have a great time!
Saturday: Leftovers or Take Out
Tonight was a bit of a wild card- the boys had leftovers and we had date night at home with sushi delivery!
Sunday: Father’s Day- Cider-Braised Brats, Peppers and Onions, Corn on the Cob

Father’s day meant that Matt got the night off from cooking, and I braved the grill all by myself… and I didn’t burn the house down, or burn the brats! The boys all had peppers and corn on the cob (a special treat) while I enjoyed my brat with a big salad. We love celebrating holidays and special occasions with good food and family!
