This week’s meal plan is loaded with healthy comfort foods, and ALL the recipes can be found on the internet, so NO BOOKS NEEDED to follow along with this one! Since I know not everyone has all the recipes books we use we wanted to make sure we did at least one of these series with recipes that ANYONE can make. We simply looked at ingredients we had in our fridge, freezer, and pantry and did some google searching with the words “paleo” and “[ingredient]” and “recipe” – the results? FANTASTIC!

Here’s a glimpse into our very real (Paleo) life – with three hungry boys and a busy schedule!

This week’s dinners were:

Saturday: Gyro Meatball Bowl
This plate of food was so good! Flavorful lamb meatballs with Primal Palate Gyro Spice blend, tzatziki sauce, feta cheese (optional), fresh herbs, and cool crunchy veggies. It took 20 minutes to get on the table and everyone gobbled this up!

Sunday: Dinner Out!
If we know we will be out of the house or there is a special occasion, we work going out to eat right into our meal plan. In this case, Sunday was a day Cole had a wrestling tournament and we enjoyed the meal of his choice after – Elevation Burger! Monday: Beef & Kale Stroganoff with Broth and Buttered Rice
Even the kids, who usually complain when a green veggie is the only option, were happy with this one! We loved that this dish was loaded with nutrient-dense kale and smothered in broth-based gravy.

Tuesday: Creamy Butternut Bisque with Bacon and Crispy Oven Baked Chicken Wings
This soup recipe is one we’ve been making for years – and everyone always loves it. Paired with our newly posted crispy oven baked chicken wings, this was an awesome dinner!

Wednesday: Tuna Casserole and World’s Best Braised Cabbage
Comfort food at its finest – this meal really hit the spot! And the tuna was so delicious even our cats were following us around in search of dropped crumbs!

Thursday: Philly Cheesesteak Stuffed Mushrooms with Pumpkin and Bacon Cauli-rice
While we didn’t use to eat any dairy at all, we’ve found that after over 5 years paleo our bodies handle it much better now. Occasionally we’ll enjoy high quality cheeses in our foods – and this is certainly a recipe we found worthy of the cause! Our side dish was discovered as a way to use up aging leftover produce, this pumpkin and bacon in cauli-rice was a fun twist on our traditional side!

Friday: Leftovers

We found ourselves with so much food in the fridge that we decided we needed to clean it out on Friday. Since we were going out of town this week, it was best to eat the stuff that would have gone bad.

Weekend Treat: Perfect Paleo Chocolate Chip Cookies
We loved these so much last week, that we had to make them again for our special treat this week. We’ve tried a lot of Paleo chocolate chip cookies, and this has become one of our new favorite recipes! They are made with SunButter and taste just like a peanut butter chocolate chip cookie! We brought them to THREE non-paleo parties and people have loved them!
