Our Summer-Inspired Weekly Family Meal Plan | Paleo Parents

This week’s menu is a great one filled with lots of simple, summer-inspired meals! We’ve been grilling, breaking out bright flavors, and making all-around fun meals loaded with lots of veggies and health-promoting ingredients!

All of the recipes in this week’s meal plan can be found on the internet, or in our cookbook Real Life Paleo!

Here’s what we ate for dinner this week:

Sunday: Meatza and Salad

Meatza is a fun Paleo-spin on pizza night, as everybody loves to put their own toppings on their individual meat-crust pizza pies! This dinner is a regular on our table because everyone loves it, and it’s incredibly simple and easy to whip up! We almost always serve this with a simple salad of whatever veggies we have on hand.

Monday: Molasses Horseradish Mustard Ribs, Ambrosia Salad, and Creamy Ranch Coleslaw

On Memorial day we had a big cookout with lots of meat, some of our favorite summertime side dishes, and delicious fresh strawberries! It was a great day spent with family- enjoying each other’s company, the lovely weather, and our freedoms.

Tuesday: Banzai Burgers and Roasted Potatoes

—> Potatoes simply peeled, tossed with Chosen Foods Avocado Oil and baked until golden

Can’t… stop… grilling! We love it because the clean up is easy (no pans to wash!) and anything grilled is automatically more delicious. These burgers topped with grilled pineapple and teriyaki glaze (a Red Robin re-creation) are always a big hit!

Wednesday: Huli-Huli Chicken Wings and Pineapple Fried Cauli-Rice

Using up what we have- the leftover pineapple from yesterday’s burgers went into this incredible fried cauli-rice. And these sweet and spicy marinated grilled wings totally hit the spot!

Thursday: Shrimp and Avocado Miso Salad

Yep, we grilled the shrimp too! We love trying new salads, and this one was loaded with tons of different flavors and textures, which made it a totally satisfying main-dish salad. When trying new recipes, if we aren’t totally sure that all of the boys are going to love it, we plan it for a night when there will surely be leftovers… just in case.

Friday: FRIED FRIDAY! Fish & Chips

—> Chips were potatoes cut thinly on a mandolin, soaked in water, towel-dried, and then fried

We’ve started a new tradition that we’re pretty excited about: Fry-Day Friday!! This week was an old favorite: fried fish, along with a new favorite (inspired by my trip to the Mediterranean?!): homemade potato chips! You can look forward to more fun Fry-Day dinners in the future!

Saturday: Dinner Out!
We celebrated Finian passing his swimming test with dinner out as a family.

Sunday: Leftovers
If we suspect (or even purposefully plan ahead for it!) that we will have leftovers, we build them right into our weekly meal plan! Sunday was leftover ribs with steamed green beans and fresh berries with whipped cream for dessert!
