Not Guiness Stew


Pre-Paleo one of our favorite meals was Guiness Stew.  With a tomato paste, sauteed onions and dark beer base, the depth of flavor warmed the family’s belly.  This St. Patrick’s Day we were wanting to relive our old beloved receipe, so Matt came up with Not Guiness Stew – which was just as yummy and filling.

It seems like a lot of work, but it’s really 30 minutes of cooking with two hours of waiting. It just so happens that Fini naps at 3 PM. I set up the stew in that 30 minutes until I need to get Cole at 3:30 and dinner is ready to be served at 5:30 PM.

And the kids always love soup for dinner!

 

Not Guiness Stew

Ingredients

  • 1/4 C pork lard
  • 2.5 lb chuck roast, cut into 1 inch cubes
  • 3 medium onions sliced
  • 2 tsp palm sugar
  • 2 Tbsp arrowroot powder (to thicken in a roux; arrowroot works simplest but tapioca or other flour would as well)
  • 1 1/2 tsp herbes de provence
  • 3 large carrots, sliced into chunks about 1 inch
  • 3 sweet potatoes, cut into 1 inch chunks (optional)
  • 8 oz crimini mushrooms, halved
  • 4 stalks of celery, sliced into 1 inch chunks
  • 1 1/2 C red wine or gluten free beer (I used New Grist lager made from rice and sorghum; ideally you'd use a stout but the only gluten free stout-like beer I've ever found is Green's Double Dark, not often available locally)
  • 1 C Beef broth
  • 1 T tomato paste
  • salt and pepper to taste

Instructions

  1. Melt lard in large stock pot or dutch oven over high heat
  2. Brown meat on all sides
  3. Transfer browned meat to plate
  4. Add onions to pot
  5. Stir over high heat until they begin to soften, about 5 minutes
  6. Reduce to Medium and stir in sugar, cook additional 15 minutes
  7. Add arrowroot, herbs, and carrots and raise heat to high
  8. After a minute, pour in beer and bring to boil
  9. Add broth and tomato paste and return to boil
  10. Return meat with accumulated juices to pot and add rest of vegetables
  11. Let it come to a boil, then cover and reduce heat to low
  12. Cook at least 1 1/2 to 2 hours until meat is tender and broth is thickened
