Meal Plan Monday, October 19th

Yup, we’re back with another Meal Plan Monday, where we share healthy meal plan ideas for families that won’t cause anxiety! You are not alone in your struggle to put healthy meals on the table without spending all day in the kitchen. Trying to get in a variety of fruits, veggies, and protein while using local, seasonal ingredients, not to mention a variety of proteins and healthy fats, while not spending all day in the kitchen – like Martha from The Handsmaid’s Tale, can feel overwhelming. But that’s why I’m here!

You can read about how we meal plan to do your own, or you can use each weekly post as your own menu or just for inspiration. Not every meal, every week will work for you and your family. But, I hope at least I can recommend some new, fun things and provide inspiration for your family to plan ahead in a way that works for you. We hope your whole family enjoys!

This Week

Total unique veggie count, just for dinners: 26!
recommend adding a green smoothie, a salad for lunch, and snacking on some fruit to get you to the goal of 30 per week

SUNDAY

  • Leftovers

We always build in a day, and it so happened that when all our food deliveries arrived our fridge was overly-full with lots to finish up before it went bad. Often we will make our Casserole or Fried Rice recipe to use up leftovers in a unique way, too.

MONDAY

unique fruit & veggie varieties – 4: white onion, spaghetti squash, parsley, garlic
protein type: seafood

T(ACO) TUESDAY

  • We made Taco Bowls with ground beef and toppings

WEDNESDAY

We have a card that says “Breakfast for Dinner” and often we wing that day, depending on what we have. We know we can always make something bread-y like waffles, pancakes, eggs-in-nest, or something egg-y like a frittata, egg sandwiches, or a scramble.

THURSDAY

  • Meatloaf, we use the recipe in Beyond Bacon which is simply modified to be a loaf from our Meatloaf Cupcake recipe
  • Fauxmato Sauce on top (we make large batches then freeze for small uses like this)
  • Loaded Baked Potatoes

protein type: beef and pork

FRIDAY

unique fruit & veggie varieties – none new tho technically we could be counting the seeds and spices as well

SATURDAY

  • We ordered in pizza! Our family always gets some sort of veggies as a topping or a side salad.
