Meal Plan Monday, November 30th

Yay, another Meal Plan Monday to share healthy menu ideas for families that won’t cause anxiety! We chose ease and comfort (can you say leftover re-use) again this week and it was just what we needed.

Low and slow was the theme this week. Which I think is a great plan as we move into the cozy months ahead. This plan is perfect for your Thanksgiving leftovers too! We still managed 26 fruits and veggies! Here’s how:

Meal Plan for the Week of November 30, 2020

Total unique veggie count, just for dinners: 30! Add a green smoothie, salad for lunch, or snack on some fruit to get you even more! We build our plans to have a variety of proteins and diversity of fruits & veggies. You’ll get even more variety in your breakfast and lunches, exceeding the goal for optimum gut health diversity of 30 servings per week

SUNDAY

The Primal Palate autoimmune blends are flavorful and this one perfectly captures the gyro flavor I had been looking for. Spice blends are almost always filled with nightshades and seeds, so having one option that you know is safe is certainly a life saver.

Unique fruit & veggie varieties – 7 : cucumber, lemon, garlic, dill, zucchini, spring lettuce, olives

Protein type: Lamb, eggs, yogurt

MONDAY

Simple roasted fish can be paired with so many things! We love to buy filets frozen from Trader Joes and Costco then just bake them with olive oil or ghee and spices. We add a side of wild rice cooked in broth and then a creamy soup really brings the flavors all together. 

Unique fruit & veggie varieties – 7: yellow onion, celery, oyster, blue oyster, and shitake mushrooms, parsley and thyme

Protein type: seafood

TUESDAY

It’s slow cooker season, and we’re putting it to work! Taco Tuesday made easy. If you’ve got leftover turkey, it makes great quesadillas or taco bowls – just pan fry it with softened onions and Tex Mex seasoning!

Unique fruit & veggie varieties – 5: cilantro, lime, avocado, romaine lettuce, salsa

Protein type: beef (or turkey)

WEDNESDAY

It’s official…I am obsessed with this recipe! Using just four ingredients including leftovers, we created a veggie packed feast. I love Trader Joes for their quick fixes like their Holiday Hash Veggies. Sometimes you just need an easy button!

Unique fruit & veggie varieties – 8: butternut squash, sweet potatoes, red onions, celery, parsley, sage, rosemary, cranberries

Protein type: poultry

THURSDAY

  • Chicken and Dumplings (coming very soon!)

We FINALLY nailed it! A totally gluten free Chicken and Dumplings recipe that hits all the comfort food points. We promise to launch it soon. We have to make it pretty first. Sometimes the best tasting food isn’t the most photogenic!

FRIDAY

  • Leftovers!

SATURDAY

Can we make #slowfoodsaturday a thing? I love coming home from our Saturday farmer’s market adventures to the scents of dinner slowly making it’s debut. Our pork shoulder paired with fresh acorn squash really makes a delicious Saturday night meal. Of course, this squash goes great with leftover roast turkey, too!

Unique fruit & veggie varieties – 2: acorn squash, sage

Protein type: pork (or poultry)

About our weekly menu

You are not alone in your struggle to put healthy meals on the table without spending all day in the kitchen. Trying to get in a variety of fruits, veggies, and protein while using local, seasonal ingredients, not to mention a variety of proteins and healthy fats, while not spending all day in the kitchen. Work, virtual school, parenting, maintaining social relationship in a time of quarantine… life is hard enough without the address stress of what to cook. But that’s why we’re here!

You can read about how we meal plan to do your own, or you can use each weekly post as your own menu or just for inspiration. Not every meal, every week will work for you and your family. But, I hope at least I can recommend some new, fun things and provide inspiration for your family to plan ahead in a way that works for you. We hope your whole family enjoys!
