RABBITS RABBITS!! You bet your booty I’m screaming that from the top of my lungs all day today after forgetting to say it last month. What are some of your craziest superstitions? We’re taking all this good luck into our meal plan this week too! Ground beef is the theme to this week’s plan. It’s often the base for so many of our favorite comfort foods. Meal Plan Monday March 1st Real Everything

Total unique veggie count for this week’s meal plan, just for dinners: 30! Add a green smoothie, salad for lunch, or snack on some fruit to get you even more! We build our plans to have a variety of proteins and diversity of fruits & veggies. You’ll get even more variety in your breakfast and lunches, exceeding the goal for optimum gut health diversity of 30 servings per week.

SUNDAY

Sunday comfort food returns! Especially when it’s all in one pot, and it’s a raved about favorite, we all win! You can use traditional tomato sauce with this recipe, but we prefer our fauxmato sauce for an extra helping of veggies. 

Unique fruit & veggie varieties – 7: yellow onion, bella mushrooms, zucchini, lettuce, carrots, beets, butternut squash

MONDAY

Another great comfort and one pot dish is our version of shephard’s pie. This is a great dish to make extra of to have for the freezer. Or even to bring to a friend or family member. 

Unique fruit & veggie varieties – 5 : cauliflower, yellow potatoes, broccoli, garlic, white mushrooms

TUESDAY

 A twist on your usual Taco Tuesday this casserole is becoming a regular in our rotation.

WEDNESDAY

Zucchini noodles are super trendy, but we’ve been loving them for years! The trick to keep them from getting too mushy is to salt them after spiraling so they can wick the moisture while you prep the rest of the dish. This take on beef and “noodles” is truly one of our favorites.

THURSDAY

  • LEFTOVERS!

    FRIDAY

      Friday nights you could switch up your regular pizza routine and make meatzas! You can even raid your local store salad bar for toppings that are already chopped and ready to go!

      SATURDAY

      It’s finally here! We’ve teased about it long enough, our version of the Egg Roll in a Bowl has arrived. And I’m telling you we’ve tried so many versions of this recipe, we have NAILED IT! I hope you love it too for your take out fake out night this week!

      About our weekly menu

      You are not alone in your struggle to put healthy meals on the table without spending all day in the kitchen. Trying to get in a variety of fruits, veggies, and protein while using local, seasonal ingredients, not to mention a variety of proteins and healthy fats, while not spending all day in the kitchen. Work, virtual school, parenting, maintaining social relationship in a time of quarantine… life is hard enough without the additional stress of what to meal plan and cook. But that’s why we’re here!

      You can read about how we meal plan to do your own, or you can use each weekly post as your own menu or just for inspiration. Not every meal, every week will work for you and your family. But, I hope at least I can recommend some new, fun things and provide inspiration for your family to plan ahead in a way that works for you. We hope your whole family enjoys!
