I am all about simplicity. As a mom of five kids, it seems that if I’m not careful to plan meals in advance, 3:00 rolls around and I stare doe-eyed into my fridge wondering what the heck I’m going to pull together for dinner. And then I get all stressed out, feel rushed, and usually everyone leaves the table still hungry because I didn’t have time to cook up anything other than the main dish.

I’ve become a huge fan of freezer meals over the past few months. Once a month, I get together with a friend and we prep 5-10 Paleo meals together to put into our freezers. Sometimes we use them for ourselves, sometimes we use them to share with a sick friend, or someone in need. I gotta say, it’s a huge load off my shoulders when I know I’ve got a meal ready to go in the freezer that I can just grab, throw in the crockpot and come home to that night!

Super Simple Crockpot Pork Roast

Ingredients

Instructions

  1. Place all ingredients in large Ziploc bag and toss to coat.
  2. Freeze, and when ready to cook, thaw overnight in the refrigerator.
  3. Place roast into slow cooker and cook on low for at least 4 hours. If you have a crockpot that has a "warm" setting, and you are going to be gone all day, I would set it to cook for four hours, and then let the roast sit on the "warm" setting for the remainder of the time!
  4. Shred and serve as desired!
