With Halloween and daylight savings this weekend, winter is practically on our doorstep, and with it the craving for all things belly-warming!! We are prepping for the winter months ahead by building our Pinterest boards with recipes for our beloved Instant-Pot, and also taking note of both new and much loved crockpot recipes – – after all this is the season of braised meats, stews and soups.
And here to add a new go-to crockpot recipe to the winter recipe arsenal is Shanti of Life Made Full, who is also kind of a convenient meal expert, as she provides a number of recipes and resources on her site to help you make the most of your time. Be sure to checkout more of her quick-prep delicious recipes on her site here!
Now we turn it over to Shanti – and her delicious pork roast recipe – enjoy!
I am all about simplicity. As a mom of five kids, it seems that if I’m not careful to plan meals in advance, 3:00 rolls around and I stare doe-eyed into my fridge wondering what the heck I’m going to pull together for dinner. And then I get all stressed out, feel rushed, and usually everyone leaves the table still hungry because I didn’t have time to cook up anything other than the main dish.
I’ve become a huge fan of freezer meals over the past few months. Once a month, I get together with a friend and we prep 5-10 Paleo meals together to put into our freezers. Sometimes we use them for ourselves, sometimes we use them to share with a sick friend, or someone in need. I gotta say, it’s a huge load off my shoulders when I know I’ve got a meal ready to go in the freezer that I can just grab, throw in the crockpot and come home to that night!
I recently wrote an ebook called 10-Minute Prep Freezer Meals, and it’s my most popular product yet! It has 30 Paleo freezer meal recipes, and each meal has wine pairing ideas for those of you who like to enjoy a glass of vino with your dinner. As you can probably guess from the title, all the meals are simple to put together! You can learn more about my ebook HERE or by clicking the image below:
Today I’m sharing with you a great meal that you can prep ahead of time for your crockpot: Super Simple Crockpot Pork Roast!
- 3–4 lb pork butt roast
- ¼ cup coconut aminos
- favorite spice blend (I used a homemade one that had onion powder, garlic powder, black pepper, and sea salt in it)
- Place all ingredients in large Ziploc bag and toss to coat.
- Freeze, and when ready to cook, thaw overnight in the refrigerator.
- Place roast into slow cooker and cook on low for at least 4 hours. If you have a crockpot that has a "warm" setting, and you are going to be gone all day, I would set it to cook for four hours, and then let the roast sit on the "warm" setting for the remainder of the time!
- Shred and serve as desired!
