Hi Friends, here’s a look at our week!
This week’s Taco Tuesday was crazy incredibly good, thanks to Otto’s Casava Flour… and Urban Poser’s genius recipe for SOFT, PLIABLE TORTILLAS. The perfect vehicle for loads of shredded pork and guac!
This 725 pound tire has been Stacy’s Everest all year. AND SHE FINALLY FLIPPED IT! Strength training has given her so much confidence, pride and sense of accomplishment. Learning to listen to her body by prioritizing sleep, working on adrenal health, and never giving up has helped her reach goals and feel great!
This. We can’t even begin to explain to you. There are no words. GINGER KOMBUCHA FLOAT WITH LEMON SORBET. Come on now! These were from Kickshaw’s Downtown Market, and for a bunch of kombucha-lovers, they were perfect! We WILL be recreating these this summer (using our favorite Ginger Kombucha, that we get by the case!).
We had a great time at Kickshaw’s for Piggypalooza- eating impressive amounts of pork and signing books. A day full of PORK-TASTIC fun warrants naps and snuggles with kiddos and kitties after.
Jimmy John’s unwiches to the rescue! We stopped for a quick bite after touring the Fredericksburg Battlefield last weekend. They aren’t PALEO-PERFECT, but they are a reasonable, ready-available lettuce-wrapped option.
Our little baby… who is not so little anymore! Wes turned 5 years old this week, which also happened to mark the start of Stacy going Paleo. We’ve had a pretty awesome 5 years, THANKS TO ALL OF YOU for taking this journey with us!
The birthday boy requested FALLEN SOUFLE CUPCAKES from Elana’s Gluten-Free Cupcakes book. We topped them with action figures and skipped the added sugar of icing. They paired great with scoop of ice cream!

Our boys are at an age where they enjoy spending time in the kitchen, and especially love baking! And making occasional Paleo treats is what makes this lifestyle sustainable for our family. So we always have PALEO BAKING ESSENTIALS on hand (specifically these are either hard to find or much more expensive in store than online), for when muffin-mania strikes the household!
For wheat flour replacement, we usually use a combination of a couple different flours in order to achieve superior texture in our grain-free goodies. Almond flour is often the main products we use, with arrowroot starch and coconut flour playing supporting roles.
Chocolate chips often make an appearance when we bake something special, and these Bittersweet ones are the best we’ve tried! Plus, they’re super clean and ethically sourced, which we also appreciate.
Whenever the recipe allows for it, we prefer to use fruit as a sweetener, and we accomplish this by using whole Medjool dates or dried dates that around ground up and made into date sugar. Dates also have a really deep, caramel-y, brown sugar tastes. No complaints there!
Since not everyone in our family eats dairy, we don’t use butter for baking and prefer lard or palm shortening for its light, neutral flavor. And forgive me for using this word, but palm shortening makes incredibly MOIST baked goods!
And sometimes we need to take the help where we can get it with a few pre-packaged Paleo-friendly options (which the boys just love!).
Simple Mills makes awesome mixes that we’ve been using for a while now. Our all-time favorite is the Banana Muffin Mix. And, they’ve just come out with a line of other mixes as well – like almond flour focaccia and pizza dough mixes, i.e. game changers!
And then there’s Capellos; you may know them for their real-deal noodles, but did you know that they also have slice and bake chocolate chip cookie dough (created by our pals at Primal Palate). It’s legit cookie dough!
Our newest Paleo baking crush is Paleoful with their almond and sunflower flour baking mixes (Brownies!!). They currently have a kickstarter campaign to raise money for a production run to get them going. Support them —–> HERE!
