Hi Friends- here’s a look at our week!
This guy. He means so much to us, and we wanted to completely SPOIL HIM on Father’s Day. The boys and I made crepes like a BOSS using The Paleo Mom’s plantain crepe recipe (seriously so easy), and our new French Steel Crepe Panmade its debut in our kitchen (love!). We love it so much we want to replace all of our pans with this awesome brand we just learned about!
And the flavors! We’ll put just about anything in a crepe… our faves are Gyro (from Paleo Take Out), strawberries with Lovebean Fudge Hazelnut Spread (we get it at OSPS), and caramel banana.
After Father’s Day we got back to our usual routine of nutrient-dense, healthy paleo foods. With Stacy back to work, it’s back to the usual #dailysalad #morevegetablesthanavegetarian routine. And don’t you love those days when you know you have something really awesome packed for lunch? And you look forward to it all morning?! THIS WAS THAT DAY! Huge salad and leftover Paleo Lasagna (lasagna so good that I may have shed a tear the first time Matt made it for us).
Brown Butter Ghee from Tin Star Foods (also found at OSPS!) is almost indescribable. It is slightly toasty, nutty, buttery ghee… and makes our Butter Pecan Apples even better (as if that were possible). The perfect solution for those bruised and beat up apples in the bottom of the fridge – turning them into a healthy treat!
As much as we love House of Gainz (our home gym) it’s nice to lift with other humans, instead of the lonely voices in my head that say, “it’s okay to lift light today.” So Stacy’s been trying to lift more at The Edge 2.0 for a little NEEDED MOTIVATION. She’s been back at it with plans to compete again in August!
Oh, and before we forget… swoon. We mentioned using the gyro recipe from Russ’s new book, Paleo Take Out for crepes. It’s phenomenal. The sauce… the meat… it is all SPOT. ON. He even perfected Paleo pita bread!! We are LOVING cooking our way through this book! Get it —-> HERE!

With this hot weather, we’ve got ICE CREAM on the brain! Making it ourselves at home allows us to CONTROL THE INGREDIENTS, and it’s a fun activity for the boys. Plus, knowing how to make ice cream is just a good life skill to have. Amiright?
So we’re sharing our essential ice-cream making tools!
There are many different styles of ice cream makers, but we prefer the type with a freezable bowl. We just keep ours in the freezer all the time, so we are ready to make ice cream at a moments notice. We have (and love) this Cuisinart model. It is affordable and has held up through A LOT of batches of ice cream.
Full-fat canned coconut milk is the base for nearly every kind of Paleo ice cream. And when flavored with vanilla, berries, caramel and other yummies, the coconut flavor is very mild, if at all detectable. We buy this brand by the case! We love that the can itself is BPA-free and the brand does not have any ingredients but coconut and water.
A good quality vanilla extract is SO IMPORTANT for ice cream- we’ve found that it can make a world of difference in the final flavor! And if you prefer simple vanilla ice cream, consider using real vanilla beans.
