Some Weekend Prep Recipes

We spent this weekend preparing for this week. It’s been so great to have breakfast pre-made and ready to eat as something you can grab on your way out the door. I think breakfast has been the hardest part about going Paleo. There’s only so many days I can have a Buffalo Jerky Stick from Cibola Farms and a hard boiled egg!

We made a Crock-Pot roasted chicken which we then turned into chicken salad with avacado, nuts and cranberries. EXCELLENT over romaine.

We also made Girl Gone Primal’s Bacon Wrapped Mini Fritatas. They’re so good we have to limit the children to two; the boys have taken to calling them Lady Gaga’s Egg Cups– they have a clue how wildly inappropriate that name is.

And of course we had to try a few more of Elana’s excellent recipes from Elana’s Pantry (see above). Carrot Banana Muffins and Chocolate Peanut Butter Tart. Both are gluten-free, dairy-free and sugar-free. But heaven on your tongue. Both are EXCELLENT.

The kids got these as mini-muffins in snack bags and have been requesting them like they’ve been starved for weeks. With tons of protein from the almond meal as well as dates, carrots and bananas, I’m keeping it a secret that there aren’t any non-fruit sweeteners!

We replaced the requested yacon syrup and stevia with honey in the Chocolate Peanut Butter Tart recipe and added a layer of banana. Peanuts aren’t really Paleo, but this dessert was so indulgent it was worth the “cheat.”
