Happy 4th of July!
Right now our family is visiting Stacy’s hometown, Virginia Beach, Virginia to enjoy a mini-vacation over our 4 day holiday break. While we soak up the sun here we’re excited to also cheer on fellow team members compete in Brute Strength Gym’s Star Spangled StrongMan on Saturday. (If you’re wondering, Stacy’s next contest is the NOVA’s Summer StrongMan Showdown in August – come compete too or cheer her on in the sidelines, it’s open to the public!)
No family trip is complete without drama, so of course there’s a hurricane blowing in at this very moment. But we remain hopeful that it won’t deter us from continuing to have a blast this weekend. We’ve got lots of board games, family and friends with us, and a kitchen full of amazing paleo foods. No seriously, because there’s 8 real food eaters in Stacy’s mom’s house (where we’re staying) we brought more food than we brought clothes! What really makes this dish interesting and not just your typical coleslaw is the inclusion of broccoli as well as cabbage. We recommend trying to find broccoli slaw already packaged at the grocery store. And try not to go too light on the herbs here. I know it’s a lot, but it makes it better that just a plain mayo slaw.
