Real Life Paleo Sneak Peek: Baked (not) Potato Soup from Steakhouse Inspired Dinner

Baked Potato Soup from Real Life Paleo by Paleo Parents

When we asked on social media which recipe from our steakhouse inspired dinner menu you all wanted us to share, the vote was resoundingly in favor of our no-potato Baked Potato Soup. Which honestly surprised me, I had my money on steak. No worries, ALL the following recipes are in Real Life Paleo so if you pre-order now you can make the entire meal on November 4th (LESS THAN A MONTH, SQUEE)! If you wanna skip all the blah, blah until the recipe just skip to the bottom. But, I can’t say I condone this behavior! We’re hoping we captured everything you’d need to know about preparing a meal! Some meals are more simple than others, so you’ll be as prepared for a busy Tuesday morning as well as an elegant Saturday evening.

Now, Real Life Paleo does include 3 separate Meal Plans as well, but what we hear from people through the blog on a regular basis is the ever frustrating question, “What does a Paleo MEAL look like; what do I put on the table after I take off the bread and pasta?!” and “How can I put a dinner on the table that my family will eat?” That’s why we did something unique with Real Life Paleo in creating Meal Ideas. It was an extremely challenging task to organize and style these shoots (my job), to time the cooking of all the food of multiple meals in one day during a short span of peak daylight hours (Matt’s job), and to physically get the precise angle in the right light for the perfect shot (Aimee’s job). But we did it, despite more than one team member asking more than once “are you SURE we need to have these shot as meals?!”, for YOU. I know, that’s corny. Tis true, however; the truth is all I got. I really hope you all enjoy and appreciate these Meal Ideas!

You’ll note from the above that this Restaurant Dinner meal is noted as a Phase 3 Dinner. Indeed, we have made a Meal Idea for each meal in each phase! That means when you’re transitioning into Phase 1, 2 or 3 not only will you have an entire week-long Meal Plan, but you also will get fully photographed separate Meal Ideas for all meals in all phases too (21 MEALS total to accompany the 175 recipes). We identify this meal as Phase 3 because that’s the “Heal” phase where most of us nutrient-seeking paleoes strive to be. When trying to heal, adding in the paleo “superfoods” is just as important as the initial removal phases. So even if you’re not transitioning to Paleo, Real Life Paleo will have an abundant amount of delicious, nourishing, healing recipes. Take for example, this 1 meal, which incorporates 4 of our 7 recommended superfoods in a spread fit for a king or queen.

Oh, yeah. No seriously. That soup is crazy good. When I tried it for the first time and the broth was thick and creamy I actually asked Matt, “Did you put heavy cream in this? We can’t use dairy in the cookbook!” and then he revealed his secret. Cooked VEGETABLES blended with stock added that sweet, creaminess to the base of this soup. This is one of those dishes that will feel guilty going down, but be incredibly healing once there! Plus… BACON ♥   ‌‍‎‏

Baked (not) Potato Soup from Real Life Paleo

Ingredients

  • 5 strips bacon, diced
  • 4 turnips (about 1 1/2 pounds peeled and cubed)
  • 1/2 pound cauliflower, cut into small florets
  • 1 yellow onion, diced
  • 8 cups Stock, chicken recommended
  • 1/2 cup coconut cream from chilled full-fat coconut milk
  • 2 tablespoons chopped fresh chives

Instructions

  1. In a stockpot, fry the bacon pieces over medium heat until crispy. Using a slotted spoon, remove the bacon to a paper towel-lined plate to drain.
  2. Pour off about two tablespoons of the bacon fat and return to the skillet to medium heat.
  3. Saute half of the turnip pieces, the cauliflower, and the onion in the hot bacon fat for 10 minutes, stirring frequently.
  4. Pour in the stock and stir. Bring to a boil over high heat.
  5. After it boils for 3 minutes, reduce the heat to medium-low and simmer for 5 minutes.
  6. Using an immersion blender or in a regular blender in batches, puree the cooked turnips, cauliflower and onions until smooth, and then return to the pot.
  7. Add the remaining turnips and coconut cream and continue to simmer until the turnips are easily pierced with a fork, about 20 minutes.
  8. Serve topped with the bacon and the chives.
