Real Life Meal Planning: What We Ate Wednesday February 3 | Paleo Parents

What an awesome week of meal plans – we’ve already seeing so many of you making what we’re making – so here’s the full week’s plan! While for years we haven’t meal planned, doing so has allowed us to eliminate a number of additional stops at the grocery store, saving us both time and money. #winning

Here’s a glimpse into our very real (Paleo) life – with three hungry boys and a busy schedule!

Sunday Dinner: Crispy Orange Pork with Fried Rice 
Possibly one of the best things we’ve ever made, this Crispy Orange Pork was incredible! Better than any takeout we’ve ever had! We paired it with fried cauli-rice for an AIP-friendly, veggie-filled dinner.

Monday: Garlic & Herb Perfect Pork Chops with Carrot Mash
We experimented with Primal Palate’s new AIP spice blends this week, and used their Garlic and Herb Seasoning to make perfect pork chops. And they were SO good (recipe coming to the blog soon!). Mashed carrots and a side salad rounded out this incredible dinner!

Tuesday: Pork Shoulder with Meaty Collard Greens
We love a simple pork shoulder (don’t be intimidated – it’s an easy cut of meat to cook!) and flavorful collards for a hearty and nutrient-dense dinner. While recipes are linked below, what was awesome was the way Matt made this entire meal in our InstantPot, which is outlined in this Instagram post.

Wednesday: ‘Krabbie Patties’ with Roasted Brussels Sprouts
We’ve still been cooking out of (and loving!) Easy Paleo Meals this week. Kelly’s fish patties recipe tasted amazing and is easy to make – and the boys LOVED that we called them Krabbie Patties. We paired it with a dinner standby of roasted brussels sprouts.

Thursday: Cheeseburger Soup with Romaine
This “soup” was another huge hit from Easy Paleo Meals among the boys (who are asking when we can have it again); we made it friendly for the whole family by using Urban Poser’s Tomato-less Marinara sauce instead of the called-for tomatoes.

Friday: Meatza with Twice Baked Macaroni with Bacon
A fun Paleo-spin on Friday pizza night, as everybody loves to put their own toppings on their individual Meatzas! For our vegetable side we made the spaghetti squash based “macaroni” dish that we all love (seriously, we make this almost weekly!).

Perfect Paleo Chocolate Chip Cookies
The nut butter in these (we used sunbutter) made them taste like peanut butter chocolate chip cookies. They were perfect – just a little crisp and wonderfully chewy!
