In case you missed it- Stacy did a live Facebook event last week, talking about how she puts together a meal plan! Lots of tips for saving time and how to make a meal plan adaptable for picky eaters or changes in the schedule.
This week’s meal plan features all recipes that can be found on the internet- no cook books needed to follow along with this one! For even more meal planning inspiration, check out our meal plan archives —> HERE!
Here’s what we ate for dinner this week:
We all looove Lasagna night! We always make this with our tomato-less marinara sauce, and this week Matt made an extra large batch of it so that we’d have some to use with Thursday’s meatballs. A good example of one of the ways meal planning saves us time!
Tuesday: The Bacon Chicken with Cabbage
—> The Bacon Chicken with Cabbage recipe from our blog
One of household-favorite meals, especially when you slather the chicken with Tessemae’s Honey Mustard! The chicken is wrapped in bacon and cooked over a bed of cabbage- turning the cabbage into something magical that even the pickiest of eaters will enjoy!
We almost always build a leftovers night into our week! Everyone looks forward to leftovers for dinner because they can pick and choose what sounds the best. Plus, things like slow-cooked meats and casseroles like Lasagna are often better second day anyways.
Thursday: Spaghetti Squash with Meatballs and Side Salad
—> Spaghetti Squash baked in the oven until tender
—> Meatballs from The Organic Butcher of Mclean but here is our favorite homemade meatball recipe
—> Side Salad is usually lettuce, carrots, cucumber… but you can find more inspiration here
We took some help from our favorite local butcher this week with these pre-made gluten-free meatballs we picked up. All we had to do was prep a spaghetti squash, bake the meatballs, and add the marinara we made earlier this week for a super quick and easy dinner.
On Friday night, Matt and Stacy went out to the big city to celebrate Brent from That Paleo Couple‘s Birthday!

We brought home this delicious challah bread from a DC-based bakery to share with the kids!
