Hi Friends! We’re talking PALEO COOKIES and COOKBOOKS today- our favorites ones! Plus, a look back at our week!

In an effort to better use the food we buy (plus prevent waste and save money) we made an official meal plan this week! The boys and I all sat down with some of our favorite cookbooks (Meals Made Simple – Nom Nom Paleo Food for Humans – Paleo Takeout – Real Life Paleo) and picked out a week’s worth of dinners- we’ll be eating like Kings this week! On Mondays when Cole and Matt go to wresting, I get to spoil the littles. This week we danced to Michael Jackson and made chocolate cookies from Clean Eating with a Dirty Mind. The boys read stories to each other and I got to soak up every lovely moment of this family time. Cookies + family = the perfect way to relax.

Thursday’s dinner from our meal plan was Eggs in Purgatory from Nom Nom Paleo’s book (with Urban Poser’s No-Mato Sauce) alongside cornbread (<–recipe here!). So much goodness! Meal planning was such a great idea, we hope to continue it every week.

Using up what we have means putting brown bananas to good use in Merit + Forks Nut-Free Banana Bread! (our favorite banana bread, which uses Otto’s Cassava Flour). Paired with a cold brew and cream for my commute (in my trusty Healthy Human tumbler) makes for a pretty great start to the day.

I mean… who doesn’t love a Paleo cookie?! Making cookies has become a family-togetherness activity for our boys. Cookies are easy to whip up, and there are even pre-made Paleo cookie mixes now! We’ve rounded up everything you need to make:

All the Paleo Cookies!

Honeyville Almond Flour is THE almond flour. It is the most widely used among bloggers and cookbook authors, so using this brand will ensure your cookies turn out as expected. It makes for great-textured cookies and is easy to use.

Otto’s Cassava Flour is a great new addition to the Paleo baking pantry, and it’s the main ingredient in our family-favorite Nut-free Chocolate Chip Cookie Recipe from Merit + Fork.

Equal Exchange Bittersweet Chocolate Chips are our favorite, and the only chocolate chips we use nowadays because they are soy-free AND fair-trade, which are two important things to us – plus, they taste incredible!

We love to make cookies with fruit as the only sweetener, which is what we use dried Medjool dates for. They add the perfect touch of brown-sugar-caramel flavor to baked goods while also providing fiber, vitamins and minerals.

If you want completely pre-made, ready to bake cookie dough- try Cappello’s. We always keep some on hand in the freezer for cookie-emergencies.

Also super-duper quick and easy is Paleoful Chocolate Chip Cookie Mix (they have both a crispy and chewy variety!) which the boys love making.

Because the boys are in nut-free classrooms, we’ve started sending Tate’s Gluten-Free Chocoate Chip Cookies for the teacher to keep on hand for the boys when everyone else is having a conventional treat. If you aren’t in a nut-free classroom, tryCaveman Cookies (lots of flavors available) plus it is great that the cookies are individually wrapped.
