Guest Post: Vanilla Madeleine Recipe, Louise Hendon

Some really amazing resources have entered the paleo scene these last few years and one that we have grown to closely follow is Paleo Living Magazine. Not only do they offer some amazing articles, tips, tools and resources on healthy living, but they are known for some wonderful recipe shares!

With a recently released book, 30 Minute Paleo Dessert Recipes, we asked Paleo Living Magazine co-founder Louise Hendon, to offer a sneak peek at one of the recipes from her book. Enjoy some deliciously light Vanilla Madeleines this holiday season, and really any time of year as this cookie is the perfect ‘just a little sweet’ treat to satisfy cravings!

Hi! I’m Louise Hendon, and I started blogging about paleo recipes as way to document my own journey to better health.

Later,  I co-founded Paleo Living Magazine, a monthly digital magazine available on iPad, iPhone, and Android devices, with my husband Jeremy. We both eat and live paleo every day, even when we’re traveling around the world. Vanilla Madeleines

Ingredients

Instructions

  1. Preheat oven to 350F (175C).
  2. Beat the egg whites using an electric mixer until peaks form.
  3. Fold in the almond flour, honey, stevia, and vanilla extract.
  4. Using a spoon, drop small dollops of the mixture onto a baking tray lined with parchment paper.
  5. Bake for 12 minutes until slightly golden on top (they burn quickly so remove immediately).
  6. Let cool before peeling off the parchment paper.
