When the recipe and pictures for this week’s guest post hit my inbox, I have never craved a Paleo treat like I did when I saw these Black and White cookie recreations. They look absolutely perfect – just as all the diehard black and white cookie aficionados prefer them (yes, such aficionados do exist, especially in New York)!

When I started The Paleo Cavewoman about a year ago, one of my main goals was to recreate some of my favorite meals and treats into healthier, easier options. I am all about simplicity and time management these days, being a full time student, having a part time job and an internship! I don’t have much time to devote to cooking extravagant meals and treats.

I am a huge fan of sweets, cookies, brownies, and chocolate in particular.

When I started Paleo I knew that my struggle was going to be with ‘treats’, so I set out on a mission to make all of my favorite cookies, bars and any other dessert you could think of, using natural, whole, Paleo ingredients. Notice I use the word ‘treat’ and not ‘cheat’?

I think it’s extremely important to treat yourself, I think that everyone could use some food for the soul sometimes… and I also think that chocolate is the answer to most problems. Yes? No? Maybe? My motto is everything within reason. I know I know, I sound like every other person out there, but it’s true! You want that cookie? Eat that cookie! But don’t let it turn into 10 cookies. I always try and have some sort of treat around the house, so when craving hit, I already have everything portioned out and ready to go!

When I was asked to do a guest post during Hanukkah, I knew exactly what I had to do. Anyone who knows me knows that I always crave Black and White cookies during this time of the year. Since being Paleo, I have yet to find a good recreation of them, so of course I had to do it! These are made with whole, natural ingredients and are gluten-free, grain-free, dairy-free and soy-free. Trust me, you wont be disappointed in these legit Paleo Black and White Cookies!

Paleo Black and White Cookies

Ingredients

Instructions

  1. Preheat oven to 350°F
  2. Grind the raw cashews into a meal in your food processor. Pulse until no large chunks remain.
  3. Add in the cassava flour, coconut flour, sea salt and baking soda. Pulse to combine.
  4. Add in the coconut oil, vanilla extract, egg and maple syrup. Pulse until mixture resembles cookie dough (thick consistency).
  5. Using a melon scooper, place balls of dough on to a nonstick baking sheet or roll about 1 tablespoon of dough between your hands and place on sheet.
  6. Press balls into flat circles with fingers or the bottom of a round cup. Should be about ¼ inch thick and about 2 inches wide.
  7. Bake for 10-12 minutes, until only the edges turn a golden brown color. Let rest for at least 20 min before removing from pan.
  8. Place in refrigerator to cool for about 10 minutes while you make glaze.
  9. Mix white glaze ingredients in a small bowl and add water until you get a desired, thick, consistency. Set aside.
  10. Using a knife or the back of a spoon, glaze half of the cookie with white glaze (repeat for all). Then place back into refrigerator to harden.
  11. Prepare the Black Glaze, melt chocolate (10 seconds at a time) and then combine to get the dark color and thick consistency.
