Hi Friends- here’s a look at our week!
There has been celebration and TEARS OF PURE JOY all week in our household! Paleo saved our lives, and it has been our goal, our dream, to reach others and help them achieve health through a Paleo lifestyle. It literally took my breath away earlier this week when I received the news that Real Life Paleo was now in all US Costcos! We’ve got all the details, plus our free printable COSTCO SHOPPING LIST and MEAL PLAN on the blog. Our MASSIVE thanks for your continued support – we would LOVE for you to send a message to Costco about wanting it to STAY in stores by buying a copy (or perhaps giving some as gifts)!
And of course Matt and I had to celebrate with some FINE EATS at Gypsy Soul restaurant. This was my local, pastured pork belly over grilled veggies and Matt’s Wagyu butcher steak with marrow butter, creamed spinach and trumpet mushrooms. And yes, it was even more delicious than it looks!
Back at home, our recent delivery of Paleo Treats was being SCAVANGED by three hungry Paleokids. It seems like the Banditos (a big almond-butter cup) always disappear first. They are especially good eaten cold straight from the freezer! We also stock Capello’s Lasagna Sheets in the freezer for our Less Lasagna (by the way, one package makes two big pans of lasagna!).
Making THE BEST CHOICES doesn’t come easy for anyone, including me. Sure, we enjoy an occasional treat, but we also eat tons of veggies, good fats, and clean meats to balance it out. On days when I’d rather be in bed or relaxing with a movie than lifting, I’m glad I have friends to inspire to get me out in the gym and encourage me to give it my all. Lifting for me provides an outlet necessary for stress relief with feel good endorphins and helps me focus on my priorities for performance, which leads to other healthy choices. No matter my reason for not wanting to beforehand, I’m ALWAYS GLAD afterwards that I chose to. Love feeling myself getting stronger!

Most Overlooked Kitchen Appliance
Deep Fryers have gotten a bad reputation, but when you use healthy fats and healthy foods to start with, it is an incredible (and easy!) way to cook dinner. The stable cooking temperature increases safety and the splatter-proof cover makes clean-up easy. We use ours for lots of things, mainly: sweet potato chips, yuca fries, and homemade chicken tenders. Most Versatile Kitchen Appliance
We use our Food Processor for so many things! From homemade Nut Butter and Muffins to shredded vegetables for Cauliflower Tots and Cranberry Orange No Bake Coconut Bars (recipe below!). You won’t know how you ever lived without one. Food Processor —> HERE!
